- 8 bone-in skin-on chicken thighs
- 4 Russet potatoes, cut into 2" pieces
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 1 tablespoon olive oil, divided
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
Instructions
- Preheat the oven to 425°F and drizzle a baking sheet with ½ tablespoon olive oil.
- In a large bowl, season the chicken thighs with salt, pepper, paprika, and oregano.
- In a separate bowl, place the tomatoes, potatoes, remaining salt, remaining pepper, and remaining oil and toss to coat.
- Place the chicken thighs onto the prepared baking sheet leaving 1 to 2-inches between each thigh.
- Around the chicken, place the potatoes and tomatoes.
