How to Make Sweet Baked Brie
Prepare a baking sheet and/or baking dish with parchment paper and then preheat the oven to 350°F/180°C.
Slice the bread into small rounds or pieces around ½" thick. Then brush both sides with olive oil and a sprinkle of salt.
Bake the bread for 2 to 3 minutes per side then remove and set it aside.
While the bread is toasting, chop the pistachios into small crumbs and stir together with the honey, red pepper flakes, and dried or fresh thyme.
Once the bread has been set aside, place the brie rounds onto the same baking sheet/dish, and cut slices into the top.
Spread the pistachio mixture over the top of each round.
Then drizzle with the remaining olive oil and a bit of honey.
Bake the brie for 10 to 15 minutes until the cheese has heated through and the top has lightly browned.
Serve with the prepared toasted bread, fresh fruit, fresh vegetables, or crackers of your choice.
Frequently Asked Questions
Traditionally, you remove the rind from brie before baking it. However, there are some recipes that call for leaving it on. It really depends on your preference. Leaving the rind on will keep the cheese together in the rind, but without it, you'll find the cheese may spread out onto the dish.
There are a lot of reasons that people do not want to use honey. You might not have it on hand or you might not be able to use honey because of allergies. Honey can also be expensive and some people worry about what is added to some of the store-bought honey.
You can use agave nectar or maple syrup as a substitute for honey. Molasses can be also be used for a richer flavor. Another choice would be to use brown sugar and water. Only add enough water to make a paste so that it gets a similar texture to honey.
Coconut syrup or nectar, barley malt syrup, and rice malt syrup are more substitutes for honey that are a little less common than some of the other choices.
Typically baked brie is served with sturdy crackers or toasted bread. For this, we toast a sliced baguette. You can also use your favorite crackers or even pretzels. For those who are watching your carbohydrate intake, you could also use fresh fruit or vegetables with this version of baked brie. I love this when paired with pears or apples.

These look like they would be delicious but I would recommend not adding the honey on top until after they are baked. Just drizzle honey on top while they are hot from the oven and this would prevent the nuts from getting burned or too brown. Just my opinion.
