Handy Kitchen Tools
While you will be adding liquid to the bottom of the pan, you can also add parchment paper to line the baking dish for a bit easier cleanup. Alternatively, you can spray with non-stick spray before placing the peaches into the dish to bake.
How to Make Stuffed Peaches
Preheat the oven to 350°F. Spray the baking dish you chose with non-stick spray, or coat it with butter for easier cleanup.
Slice the peaches in half and remove the pits. Scoop out a bit of the pulp from each peach so you have a 2" circle in the center. Save the pulp for the filling.
Finely chop the pulp you removed, and then combine it in a bowl with the dried cranberries, almonds, 2 tablespoons peach nectar, spices, and the graham cracker crumbs. Mix this well.
Place the peach halves into the baking dish, then divide the crumbly mixture between the 4 halves, adding to the center you removed the pulp from.
Add the remaining peach nectar around the base of the peaches in the dish. Cover with aluminum foil and bake for 35 minutes.
Remove the aluminum foil, sprinkle the top with brown sugar, and bake for an additional 10 to 15 minutes until the peaches are tender.
Serve with ice cream and a drizzle of peach syrup from the baking dish. You can also top with additional caramel syrup, and toasted nuts for texture if desired.
