Quesadillas are the perfect Mexican-inspired dish. They are perfectly crisp on the outside and filled with delicious flavors and mostly tons of cheese. This particular recipe is easy to prepare and is a great addition to your weeknight menu.

- 1 tablespoon olive oil
- ½ cup red onion
- ½ cup bell peppers
- 1 pound ground beef
- 7 large flour tortillas
- 1 package taco seasoning
- ¼ cup water
- 1 cup Mexican cheese blend

How to Make Sheet Pan Quesadillas
Preheat the oven to 425°F and line a baking sheet with parchment paper.
In a large skillet, heat the olive oil over medium heat, then cook the onions and bell peppers until they are soft, approximately 4 to 5 minutes. Remove from the pan and set them aside.
Add the ground beef to the skillet, and cook, stirring regularly, until no longer pink.
Drain off any excess grease.
Return the meat to the skillet and add the taco seasoning along with ¼ cup water.
Continue cooking for 2 to 3 minutes, until the water has evaporated and the flavors are well combined. Remove from heat and set aside.
Place the tortillas onto the baking sheet so that they are overlapping the sides of the pan, three on each side.
Sprinkle ⅓ of the cheese over the tortillas evenly.
Then top with ½ of the ground meat.
Top the meat with ½ of the vegetables.
Add another ⅓ of the cheese on top of the vegetables.
Repeat adding the remaining ground beef, vegetables, and finishing with cheese.
Fold the tortillas over the top and place the final tortilla in the center covering any gaps remaining.
Place a second clean baking sheet on top of the tortillas.
Bake for 25 to 30 minutes until crispy and golden brown.
Remove the top baking sheet and cut it into portion sizes before serving.
Top with your favorite toppings such as sour cream, salsa, and avocado.
