Baked Buffalo Chicken Dip
While a lot of people like buffalo chicken, I always reach for something a bit milder. I like the flavor, but it can be a bit too spicy for me. So, a dip that has creaminess with the flavor in the background, sounds perfect.
It doesn't get any easier than this recipe where you really just throw together a few ingredients, bake them, and enjoy! Of course, if you like buffalo flavor, you might also want to check out our baked buffalo wings recipe, the buffalo chicken eggrolls, or even these delicious buffalo chicken enchiladas.
What Goes with Buffalo Chicken Dip?
This buffalo chicken dip is delicious on its own, but there are a few things that you can serve with it to make it even better. Of course, dipping something into it is a natural choice, but you can eat this with a spoon if you want! It's just that good!
I like it with tortilla chips, crackers, and breadsticks. You can even make some homemade pita chips for this if you want.
Other common items to serve with this dip are celery or carrot sticks. I like to take it further and add some sugar snap peas, broccoli florets, or even cucumber spears.
It is excellent spread over a tortilla, wrap, or even naan bread and rolled like a wrap or pinwheel sliced into individual bite-sized servings. No matter what you decide to serve it with you'll love the creamy flavorful dip.
Ingredients
- 4 cups shredded cooked chicken breasts
- 8 ounces cream cheese
- ¾ cup hot sauce or buffalo sauce
- 1 cup ranch dressing
- 1 ½ cups shredded cheddar cheese
Handy Kitchen Tools
- Stockpot
- Tongs
- Measuring cups and spoons
- Mixing bowls
- Meat shredder
- 9" or larger baking dish - I used this oval baking dish
How to Make Buffalo Chicken Dip
Start by cooking your chicken breasts. Place them in a stockpot and cover with water then bring that to a boil over medium heat. I let boneless chicken breasts cook for about 15 minutes and bone-in for closer to 30 minutes. Just make sure it reaches 165°F internally and is easy to shred.
Remove the chicken from the water, and shred or chop into small pieces. Two forks, a meat shredder, or even a hand mixer can be used to shred the chicken easily.
Now, preheat the oven to 350°F/175°C and get a baking dish ready. You can use any shape of dish, but I like the 10" oval for this dip.
Begin layering the dip by spreading the softened cream cheese over the bottom of the baking dish.
Then top with the shredded chicken.
Pour on the buffalo sauce and then the ranch dressing.
Use a spoon to mix this together until the chicken has a good mixture of sauces overall of the pieces.
Top with shredded cheddar cheese. You can also mix in part of the shredded cheese if you prefer.
I cook for 25 to 30 minutes until the chese on top is beginning to brown and bubble around the edges. Just make sure it is heated through and the cheese is melting.
Once baked, remove from the oven and serve hot with your favorite dipping items like chips, veggies, or crackers.
Frequently Asked Questions
Absolutely! Rotisserie chicken is a great choice for this dip. It is fast and easy. You will want to shred the chicken once you remove it from the chicken bones. I like to chop it into small pieces so that it is easy for scooping.
Another option is to buy already shredded rotisserie chicken at places like Costco, Sam's Club, BJ's or similar warehouse or club stores.
The most likely reason for a greasy dip is that the cream cheese was not at room temperature when it was added to the mixture. Make sure to let the cream cheese soften before adding it to the rest of the ingredients. You can also try using reduced-fat cream cheese to cut down on some of the fat and calories.
Another reason that the buffalo chicken dip might seem greasy is that too much hot sauce was used. Start with ½ cup of hot sauce and add more to taste. You can always add more, but you can't take it away once it's in there.
Can I Use Homemade Ranch Dressing?
You can certainly use homemade ranch dressing instead of using a store bought version. While many of the commercial ranch dressings that you buy are similar, making your own lets you control the ingredients that are in it. A simple ranch dressing recipe that you can use is :
- 1 cup mayonnaise
- 1 cup buttermilk
- 1 tablespoon dried parsley
- 1 teaspoon dried dill
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- salt and black pepper to taste
Simply whisk all of the ingredients together in a bowl until well combined.
There are also Ranch seasoning mix that you can buy at the grocery store to make your own ranch if you do not want to deal with the different spices.
