Eggs are a breakfast staple for a reason - they are an excellent source of protein and help to keep you feeling full until lunchtime. When combined with cabbage, you have a nutrient-rich meal that will power you through your day. Of course, I love making this recipe for dinner too because it is extremely inexpensive to make and it is very filling. Especially when served with rice.
The key to making this dish is to make sure that the cabbage is not overcooked. You want it to be slightly crispy so that it can hold up to the eggs.
To avoid soggy cabbage, cook it in small batches, and be sure to drain any excess water before adding in the eggs.
Absolutely! This recipe is very versatile and you can add whatever vegetables you like. Some of my favorites to add are carrots, bell peppers, and onions. Another favorite to add to any stir fry is bean sprouts for nutrition and texture. For more protein, you can mix in some mushrooms too.
Make sure to cut the vegetables into small pieces so that they cook evenly. You may need to add a little bit more oil to the pan if you are adding a lot of vegetables.
This recipe for cabbage and eggs can be served on its own as a budget meal but it can also be served with any type of protein. I love to add a side dish of sausage or bacon. Pieces of ham are also a delicious addition to this recipe. You can also serve it with chicken breast or even steak if you want this to feel like a heartier dinner.
Of course, you can go completely traditional and serve it alongside a bowl of basmati rice or plain noodles.
