- 2 medium Italian eggplants
- 1 teaspoon salt, divided
- 2 teaspoons olive oil
- 2 garlic cloves
- 1 ½ cups tomato sauce (350 ml)
- 1 teaspoon dried basil
- ½ teaspoon black pepper
- 12 slices ham
- 14 slices mozzarella cheese
- 1 ¼ cup cottage cheese (200 g)

How to Make Eggplant Parmesan Roll Ups
Begin by preheating the oven to 400°F. Line a large baking sheet or baking dish with parchment paper and set it aside. Spray the baking dish for your roll-ups with non-stick spray, then set it aside.
Wash and slice the eggplants, removing the ends then cut them into ¼" lengthwise pieces.
Place the eggplant pieces onto the baking sheet then sprinkle with ½ teaspoon salt and bake for 10 minutes to soften.
Once the eggplant is cooked, set it aside to let it cool before rolling them.
While the eggplant cooks, heat a medium skillet with olive oil and then add garlic. Cook the garlic for 1 minute, until just beginning to brown.
Add in the tomato sauce, basil, remaining salt, and pepper. Then simmer, stirring it regularly, for 10 minutes.
Spread a small amount of the sauce onto the bottom of your baking dish.
Add a piece of ham and slice of cheese to each slice of eggplant, then roll and place onto the sauced baking dish seam side down.
Continue until all eggplant has been used.
Pour the remaining sauce over the top of the eggplant rolls.
Top with cottage cheese and additional slices of mozzarella or your preferred shredded mozzarella cheese.
Bake for 20 minutes until heated through and the cheese has melted and browned nicely.

Cheesy Eggplant Parmesan Rollups
Cheesy eggplant Parmesan rollups are a perfect weeknight meal loaded with flavor and perfect for adding extra veggies to your menu!
Ingredients
- 2 medium Italian eggplants,sliced into ½" pieces
- 2 teaspoons olive oil
- 2 garlic cloves
- 1 ½ cups tomato sauce (350 ml)
- 1 teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 12 slices ham
- 14 slices mozzarella cheese
- 1 ¼ cup cottage cheese (200 g)
Instructions
- Preheat the oven to 400°F/200°C and line a baking sheet with parchment paper. Lightly spray a baking dish (10" oval was used) with non-stick spray and set it aside.
- Remove the ends of the eggplants, then slice them both lengthwise into ½" strips.
- Place the eggplant slices onto the lined baking sheet and sprinkle with ½ teaspoon salt. Bake for 10 minutes then remove and set aside.
- In a medium skillet, heat olive oil over medium heat. Add the garlic to the pan and saute for 1 to 2 minutes, until just beginning to brown, being careful not to burn.
- To the skillet, add the tomato sauce, basil, remaining ½ teaspoon salt, and black pepper. Simmer, stirring regularly, for 10 minutes.
- Pour ½ cup of the sauce onto the bottom of the prepared baking dish, and spread it out to lightly cover the base of the dish.
- Place a slice of ham and a slice of cheese onto each slice of eggplant.
- Roll the eggplant and then place each piece seam side down onto the sauce in the baking dish.
- Top with the remaining sauce.
- Add cottage cheese over the top of the eggplant pieces with sauce.
- Top with the remaining mozzarella cheese slice.
- Bake for 20 minutes until golden brown, heated through, and all of the cheese has melted.
