- 4 large chicken breasts
- ¼ onion
- ¼ red bell pepper
- ¼ yellow bell pepper
- ¼ orange bell pepper
- ¼ green bell pepper
- 2 teaspoon garlic powder
- 2 teaspoon onion powder
- 2 teaspoon chili powder
- 1 teaspoon ground cumin
- 2 teaspoon salt
- 2 teaspoon pepper
- 3 tablespoon olive oil
- 4 oz cream cheese
- 1 cup shredded mozzarella
- 1 cup shredded Mexican blend cheese
Optional: If you prefer a bit more heat, add jalapeno slices to the rest of the vegetables added to your stuffed chicken.

How To Make Fajita Stuffed Chicken
Slice the onion and bell pepper into strips and then set them aside.
Pat the chicken breasts dry, then slice along one side cutting through to the middle but leaving the outside intact.
In a small bowl, whisk together the garlic powder, onion powder, chili powder, ground cumin, salt, and black pepper.
Season the chicken breasts on both sides and inside the middle then set them aside.
In a large skillet, heat 1 tablespoon of the olive oil over medium heat.
Add the peppers and onions to the skillet and season with any seasoning left from the chicken, then cook for 3 to 4 minutes until softened.
Remove the vegetables and pour into the bowl with cream cheese and shredded cheese blend.
Stir the cream cheese mixture together until well combined.
Scoop the cheese mixture into the opening in each chicken breast.
Add additional oil to the skillet, then place the stuffed chicken breasts into the skillet over medium heat.
Cook for 10 to 12 minutes per side, until the chicken is cooked through and has reached at least 165°F at the thickest part of the chicken breasts.
Let stand for 5 minutes before slicing to serve.

Chicken breast is my favorite way to make this fajita stuffed chicken. Boneless, skinless chicken thighs are an easy substitute. While chicken thighs aren't thick enough to create a pocket inside, you may want to wrap the chicken around the stuffing instead.
Keep in mind that changing the type of chicken will change the cooking time. Chicken thighs have more fat in them so this will change the nutritional values as well

You do not want to make 2 halfs. This is a really simple process. You just need a sharp knife. Cut into the chicken breast, making sure not to cut all the way through. Then open it up like a book. You can then fill it with your cheese mixture.
- Make sure that your cheese mixture is well seasoned. This will help to add flavor to the chicken. Adding vegetables to the mixture helps, but you could also add a bit of the seasoning blend too.
- Use a meat thermometer. Make sure that your chicken is cooked all the way through before serving. You can do this by using a meat thermometer. The chicken should be cooked to an internal temperature of 165°F at the thickest point before serving for safety.
