Chicken Spaghetti + 50 Chicken Dinner Recipes
Make chicken spaghetti as a delicious and easy meal that is loaded with flavor and kid-friendly!
Ingredients
- 1 pound spaghetti
- 2 tablespoons olive oil
- 1 green bell pepper, diced
- 1 yellow onion, diced
- 1 pound boneless skinless chicken breasts, cut into ½" pieces
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon ground cumin
- 1 (15 oz) can Rotel tomatoes, with juice
- 1 (15 oz) can cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
Instructions
- Prepare spaghetti according to package directions. Drain, reserving ½ cup pasta water, and set aside.
- In a large skillet, heat olive oil over medium heat. Add the peppers and onions. Cook, stirring regularly, for 4 to 5 minutes until tender and beginning to brown. Remove from the pan.
- Toss chicken pieces in salt, pepper, garlic powder, and cumin then place into the same skillet. Cook for 5 to 8 minutes, stirring regularly, until the chicken is cooked through.
- Add the bell pepper, onion, Rotel in juice, and cream of chicken soup into the skillet with the chicken, and stir to combine.
- Reduce the heat to low and add in the shredded cheeses stirring until melted. If the sauce is too thick, add in the reserved pasta water until desired consistency.
- Toss the pasta in the sauce and serve.
Notes
Can be made with already cooked shredded chicken.
