Ingredients
For Cake
- ¼ cup butter (55g)
- 4 ounces dark chocolate (113 g)
- 3 large egg yolks
- ¼ cup heavy cream (80g)
- 4 tablespoons all-purpose flour
- 1 tablespoon unsweetened cocoa powder
- 3 egg whites
- 4 tablespoons granulated sugar
For Strawberry Filling
- 2 ounces white chocolate (50g)
- 1 ¼ cup heavy ccream (300 g)
- ½ cup milk
- 50g white chocolate
- 6 ounces strawberry gelatin powder (170 g)
Note: You can use unflavored gelatin and strawberry powder if you prefer, but strawberry gelatin works fine for this.
For Whipped Cream Topping
- 1 ¼ cup heavy ccream (300 g)
- 4 tablespoons of strawberry jam

Note: This cake was made in a small heart-shaped mold, but is ideal for making in an 8" round cake pan.
How to Make the Chocolate Cake
Begin by spraying your cake pan with non-stick spray or using butter to coat the pan well. Then, preheat the oven to 340°F/170°C and place your rack in the center.
Using a small saucepan or skillet, melt the butter and dark chocolate over medium heat. Make sure to stir them constantly to make sure it doesn't burn.
Once the chocolate has melted, add the cream and whisk together.
Then, add in the egg yolks. Whisk the yolks in constantly to prevent them from scrambling.
Whisk in the flour and cocoa powder until the batter is combined then set it aside.
Whisk or beat the egg whites and sugar together until they form soft white fluffy peaks.
Then, fold in the chocolate mixture and pour into the prepared cake pan.
Bake for 30 minutes then set aside to cool.
How to Make the Strawberry Filling
While the cake is cooling, melt the white chocolate and cream in a small pan over medium heat.
Whisk continually to make sure the chocolate doesn't burn and is just melted.
Once melted, add in the milk and strawberry gelatin and whisk to combine.
How to Make the Whipped Cream Topping
In a large bowl, whisk the heavy cream until peaks form.
Fold in the strawberry jam until just combined.
How to Assemble a Strawberry Chocolate Cake
Use the back of a spoon to create an indent in the center of the cooled cake.
Then pour the strawberry gelatin filling into the middle and refrigerate.
Once the gelatin has set, spread the whipped cream over the top and sides.
You can add additional strawberries and chocolate shavings on top before serving.

Any kind of cake pan can be used to make strawberry chocolate cake. I prefer to use springform pans whenever I am making desserts like this because it is so much easier to get the cake out. Some people worry that springform cakes will leak since they come apart but if you make sure everything is connected correctly, you do not have to worry about it.
An average 8" to 9" round cake pan is ideal for this if you do not plan to use a mold as shown or a springform pan.
I love the combination of strawberry and chocolate but you can use whatever flavored jam you prefer. Cherry, blueberry, pineapple, and raspberry are some favorite choices for this. You can just swap the same flavor of gelatin for the filling as you use for the fruit whipped cream on top.
Usually, cakes do not need to be refrigerated. However, when you have certain ingredients on a cake, you want to make sure that you keep it in the refrigerator. In this case, there is a cream topping and you want to make sure to keep it stored in the refrigerator.

- In a small saucepan, over medium heat, melt the butter then add in the dark chocolate pieces. Stir constantly, until the chocolate has just melted.
- Add the cream to the chocolate and stir to combine.
- Next, add in the egg yolks, making sure to mix well and constantly until combined to make sure they do not "scramble".
- Add in the all-purpose flour and cocoa powder then set the mixture aside.
- In a large bowl, whisk together the egg whites and sugar until white, fluffy, and soft peaks form.
- Fold the chocolate mixture into the egg whites until incorporated.
- Pour into a prepared cake pan and bake for 30 minutes.
- Remove and set aside to cool completely.
How to Make the Strawberry Filling
- In a small saucepan, over medium heat, add the white chocolate and heavy cream. Heat whisking regularly, until the chocolate has melted.
- Add in the milk and stir to combine.
- Then whisk in the strawberry gelatin or the strawberry powder and unflavored gelatin. Remove from heat.
How to Make the Whipped Cream Topping
- In a large bowl, whisk the heavy cream until peaks form.
- Fold in the strawberry jam until just combined.
How to Assemble a Strawberry Chocolate Cake
- Use a spoon to create a small indent in the center of the cooked and cooled cake.
- Pour the gelatin mixture into this indentation and refrigerate for 1 hour.
