Does Mousse Have Raw Eggs?
This chocolate mousse recipe does include eggs, but they are not raw in the finished product. You will temper the eggs and slowly cook the ingredients so there is no worry about consuming raw eggs in this dish. Tempering eggs allows you to cook them without scrambling them and helps thicken dishes such as this custard to a perfectly delightful bite of chocolate every time!

How Can I Make My Mousse Thicker?
If your mousse just doesn't want to thicken, it may be due to not properly cooking the mixture, too much liquid, or sometimes simply the current humidity in the air. My go-to method of thickening a custard is to use 1 tablespoon cornstarch in 2 tablespoons of milk and then mix it into the custard or mousse then continue heating it. This usually does the trick in seconds. This would be used before adding the whipped cream.
Why Is My Chocolate Mousse Not Fluffy?
The most common reason the mousse did not turn out fluffy is that your whipped cream was not beaten enough or, was mixed into the custard rather than folded gently. Whipped cream should form stiff peaks before being folded into the chocolate custard mixture.
When folding in the whipped cream, you need to do this by hand with a rubber spatula. Gently fold into the custard until it is just barely incorporated. Over mixing or using a beater or blender for this would remove the air whipped into the cream and keep the mousse dense rather than fluffy like desired.

How do You Make Chocolate Mousse from Scratch
In a medium bowl, whip together egg yolks and sugar until pale and fluffy. Set aside.
In a heavy bottom saucepan, warm ¾ cup heavy cream, do not let this boil, simply warm.
Slowly pour the warmed cream into the egg and cheese mixture mixing constantly as you do to temper the eggs. Be careful to not pour in the cream all at once or to let the eggs curdle.
Pour the mixture back into the saucepan and return to low heat whisking constantly for 3-5 minutes until thickened. If lumps appear, strain the custard through a sieve and return to the pot to thicken.
Melt the chocolate in 30-second increments until just melted.
Remove the mixture from heat after 5 minutes, and add the chocolate and vanilla then stir with a wooden spoon or rubber spatula.
Pour the mousse into a clean bowl and stir every 5 minutes until the mixture has cooled to room temperature - around 15-20 minutes.
While the mixture is cooling, whip the remaining heavy cream into stiff peaks.
Fold the whipped cream into the chocolate mixture until just combined.
Spoon the mousse into dessert cups and refrigerate for at least 2 hours prior to serving.
Serve topped with additional whipped cream, mint, and berries.
