The sweet and slightly spicy sauce combined with rich and earthy mushrooms turns the chicken into a delicious main dish you will love. Add in cheddar and some crispy bacon and you have an all in one meal that is satisfying for everyone at your table!

This recipe is not entirely keto-friendly as listed. You can, however, make this low-carb by simply swapping the barbecue sauce for a sugar-free variety. G.Hughes sugar free barbecue sauce is a great choice to swap in the sauce mixture. That change is all you need to turn this into a keto or low-carb friendly recipe.
For a full meal, you could serve this with keto bacon wrapped Brussels sprouts and Instant Pot mashed cauliflower. A perfect keto-friendly meal! A side of keto bread would also fit to make this feel like a true copycat of the restaurant-style meal.
Can I Make Alice Springs Chicken in the Air Fryer?
You can definitely make this recipe in your air fryer! Just place the chicken into a baking dish that fits into your air fryer. Alternately, you can place parchment paper into the air fryer basket and place the chicken directly onto the paper. If doing that, you will want to watch closely to make sure nothing burns.
When making this in the air fryer, I recommend cutting the cooking time down by 5-7 minutes. Always check the internal temperature of the chicken first for safety before serving.
Can I Use Chicken Thighs Instead of Chicken Breasts?
If your family prefers chicken thighs over chicken breasts, this is a great recipe to substitute those in too. The cook time will vary slightly since chicken thighs tend to be thinner than breasts when boneless and skinless. Cook the chicken for 10 minutes before adding the toppings for an additional 7-10 minutes. As always, verify the internal temperature has reached 165°F internally for safety before serving.
What Are The Best Mushrooms for This Recipe?
Basic white button mushrooms are the best choice for this recipe since they are so easy to find and provide a nice rich earthy flavor. Baby Bella mushrooms are also good choices if easy to find in your market. While you can get creative with other types of mushrooms, this recipe really only needs the traditional mushroom since the flavors of others would be covered by the sauce and cheese and not as prominent or useful in this meal.

- Dijon mustard
- Barbecue sauce

How to Make Copycat Outback Alice Springs Chicken.
In a large skillet, cook the bacon until crisp, then remove and set aside to drain.
Add the mushrooms to the pan and cook for 5-6 minutes stirring regularly until the mushrooms have softened. Remove these from the pan and set aside.
Preheat the oven to 375°F and spray the bottom of a baking dish with non-stick spray.
Season the chicken breasts on all sides with salt and pepper then place in an even layer in the bottom of the baking dish.
In a small bowl, whisk together the mayonnaise, mustard, and barbecue sauce.
Spread the mixture over the tops of the chicken in an even layer coating all of the chicken well.
Bake for 15 minutes then remove from the oven and pour the prepared mushrooms over the top of the chicken and spread in an even layer.

As mentioned above, using a meat thermometer to determine the internal temperature of chicken is the best way to make sure the chicken is done without over cooking.
