You can absolutely make these in an air fryer rather than pan-frying. This saves lots of calories and mess in the kitchen. To make them in the air fryer, preheat it to 380°F. Spray the bottom of the air fryer basket with olive oil spray, then place the eggrolls in a single layer with space between each roll. Spritz the top of them with additional olive oil spray. Cook them for 6 minutes, turn, and then cook an additional 4 to 6 minutes until crisp.
Can You Freeze Homemade Buffalo Chicken Eggrolls?
You can freeze these buffalo chicken eggrolls for up to 4 months. They can be frozen before or after cooking. I prefer to fully cook them, allow them to cool, wrap, and freeze to then reheat in the oven until crisp. If you prefer, you can warp them and then cook them from frozen in a deep fryer. Both methods work well.

How to Make Buffalo Chicken Egg Rolls
Season both sides of the chicken breasts with paprika, oregano, garlic powder, salt, black pepper, chili powder, and cayenne pepper.
In a large skillet, heat 1 tablespoon olive oil over medium heat.
Add the chicken breasts and cook for 5 to 6 minutes, then turn and continue cooking for an additional 5 to 6 minutes until the chicken is cooked through and has reached 165°F internally.
Remove the chicken from the skillet and allow it to cool for 5-minutes before shredding with forks or mixer.
In a large bowl, add the shredded seasoned chicken, softened cream cheese, mozzarella, hot sauce, and melted butter.
Mix together until well incorporated and the chicken is coated with the cheese and sauce mixture. Set aside.
Place ¼ cup cold water in a small bowl and set next to a plate or clean work surface.
Lay a single egg roll wrapper onto the clean surface, then lightly brush the outside edges with the water.
Scoop approximately 2 tablespoons of the chicken mixture onto the center of the egg roll wrapper.
Fold two corners of the wrapper inward over the filling.
Then, begin rolling from the corner closest to you away tucking it under so the filling is completely covered and the roll is formed.
If needed, add a dab of water on the outside of the wrapper where it meets to seal.Set the wrapped eggroll, seam side up, onto a clean platter or cutting board.
Repeat this process until all filling has been used.
In a deep-sided skillet, heat ½ cup vegetable oil until it reaches 375°F.
Place the eggrolls in a single layer into the hot oil making sure they don't touch.
Cook for 4 minutes per side, or until golden brown and crisp.
Remove from the oil and drain on paper towels. Repeat until all eggrolls are done cooking.
