How to Make Crispy Rice with Salmon
For this recipe, you will need to plan ahead for the time to cook the rice as well as to let it chill. The preparation of the appetizer is fast, but the prep time requires around an hour. So, prepare the rice as you normally would until cooked through and slightly sticky. Once it is cooked, you will then spread it into an even layer in a 9"x13" baking dish. Then, cover the rice and refrigerate it for 30 minutes.
When the rice has cooled, you can remove it from the refrigerator, and then cut it into squares. I made them around 3" but you can make them any size you prefer for snacking or sharing.
Then, you will fry the rice to make it crispy. In a deep skillet, heat oil for frying, then put the squares of rice in and cook for 1 to 2 minutes per side, just until golden and crispy. Remove from the hot oil and set aside to drain on paper towels.
Once the rice is done cooking, you can prepare the seafood topping. Start by dicing the salmon into small pieces. Then, put this into a medium bowl along with the mayonnaise, tomato sauce, and soy sauce. If you prefer spicier, substitute the tomato sauce for chili sauce or sriracha sauce.
