What Seasonings Can You Add to These Potatoes?
When it comes to fries, there are so many ways that you can season them. There is the classic just salt and salt and pepper. Then you can branch out and get more creative. For this recipe, I used garlic and oregano alongside salt and black pepper, but below are a few other options you can try.
- Italian fries using garlic powder, onion powder, Italian seasoning blend, dried parsely flakes, salt, and black pepper.
- Spicy fries with smoked paprika, cayenne pepper, chili powder, and a bit of garlic powder to mellow the heat.
- Garlic Parmesan fries with garlic powder, onion powder, salt, black pepper, dried parsley, and Parmesan cheese.
- Cajun fries using a favorite Cajun seasoning blend or just garlic powder, cayenne pepper, smoked paprika, chili powder, and black pepper.
- Taco steak fries using chili powder, cumin, salt, black pepper, lime juice, and fresh cialntro or a favorite taco seasoning blend.

- 2 ¼ pounds Russet potatoes (1 kg)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- ½ teaspoon red chili flakes
For the honey mustard sauce
- ¼ cup mustard
- ½ cup mayonnaise
- ¼ cup honey
- 1 teaspoon lemon juice
- ½ taspoon garlic powder
- ½ teaspoon dried parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper

How to Make Crispy Baked Season Fries
Wash and peel the potatoes then cut the potatoes in half lengthwise. Slice each half into ¼" slices to create fries.
In a large stockpot, cover the potatoes with water and a generous sprinkle of salt, thing bring to a boil over medium heat.
Boil for 10 minutes, until the potatoes are fork-tender, but not mushy.
Preheat the oven to 375°F and line a baking sheet with parchment paper.
Drain the potatoes.
Then pour them into a large bowl with the olive oil, garlic powder, black pepper, salt, dried oregano, dried parsley, and chili flakes.
Spread the potatoes onto the baking sheet into an even layer, this may require more than one baking sheet.
Bake for 25 minutes, then turn the potatoes and continue baking for an additional 20 to 25 minutes, until the potatoes are golden brown and crispy.
How to Make Homemade Honey Mustard
In a small bowl, whisk together the mayonnaise, mustard, honey, lemon juice, garlic powder, dried parsley, black pepper, and salt until well-combined.
Serve with crispy fries for dipping.
Frequently Asked Questions
You can use any variety of potatoes in this recipe, but Yukon Gold and Russet potatoes work best. Russets have a lower moisture content than Yukons, so they will typically get crispy easier.
While other potatoes will work, you run into the issues of them getting crispy. I prefer to make sure my fries are crispy, especially since I am baking them and not frying them.
It may seem excessive, but by boiling the potatoes first, you are adding texture to the outside of each fry that will help them to get crispier.
