I admit I love some good fresh sushi, but oftentimes since I am landlocked, I prefer the vegetarian rolls or those that use cooked rather than raw fish. This cucumber smoked salmon roll idea is a perfect way for me to get those flavors at home without having to go to a pricey restaurant.

- 1 medium cucumber
- 2 ounces smoked salmon
- 3 tablespoons sour cream
- 1 tablespoon fresh chopped parsley
- 1 teaspoon white sesame seeds
- 1 teaspoon black sesame seeds

How to Make Cucumber Smoked Salmon Rolls
Wash and pat dry the cucumber then peel using a vegetable peeler.
Using the vegetable peeler or a mandolin slicer, slice 6 equal slices the length of the cucumber creating thin "sheets" of cucumber.
On a clean surface/cutting board, line the sheets of cucumber together side by side but overlapping slightly to form a solid sheet. Use 5 to 6 slices depending upon how large the cucumber was.
Pat the top of the cucumbers dry.
Spread sour cream over the top of the cucumber sheet.
Sprinkle fresh parsley over the sour cream.
Lay the smoked salmon over the top evenly.
Carefully, starting closest to your body, roll the cucumber slices up and over the filling, pulling back against itself tightly until completely rolled.
Slice into 6 pieces. Secure each "roll" with a toothpick through the middle if needed.
Sprinkle the top with sesame seeds before serving.
