- 4 sheets of graham crackers, crushed - approximately 1 cup/120g
- ⅓ cup brown sugar (65g)
- 20oz lemon curd (567g) - approximately 2 jars
- Powdered sugar for dusting the top

If making your own graham cracker crumbs, do so now. You will need to crush enough to make 1 cup or 120g of crumbs. This is approximately 4 full sheets of graham crackers. You can also make homemade lemon curd if using it before you begin the rest of the process.
Preheat the oven to 350°F/190°C and then line a 9"x13" baking dish with parchment paper making sure it overlaps the ends a few inches. Then, spray the paper with non-stick cooking spray and set this aside.
Now, combine the graham cracker crumbs, flour, butter, sugar, and brown sugar together in a large bowl. Mix this until it is a moist crumble that resembles wet sand.
Press this into the baking pan evenly and bake for 25 minutes, or until it has turned golden brown.
Pour the lemon curd into a microwave-safe bowl and heat in the microwave on high for 30 seconds. Stir the mixture, then heat again for 30 seconds. Stir it again, and then pour it on top of the baked crust.
Bake this for 20 to 25 minutes until it is bubbling on top.
Remove this from the oven and let it cool for at least 30 minutes before lifting it out of the pan to slice and serve.
