Talk about revolutionizing your meal plan! Homemade pasta is one of the easiest things you can make from scratch, and these are by far my favorite. Egg noodles are a wonderful addition to many of your favorite meals!
Homemade Egg Noodles
When I am sick, there are only a few foods I feel like eating. One of those is egg noodles. They are just such a perfect little bite of soft buttery goodness. Compared to other kinds of pasta, egg noodles just have a richness that really makes them unique.
I love that making these is something easy enough that my son has already learned how. Pasta is one of those special recipes that once you accomplish it, you feel like a master chef. For this reason, I think everyone should start here and learn how to make a simple soft, buttery, delicious bowl of egg noodles.
Do I Need a Pasta Maker?
No! This is another one of my absolute favorite things about this particular recipe. You don't need any special mixer, attachment, or maker to create yummy pieces of pasta. Instead, the most important tools for making this include a good rolling pin and a nice sharp knife or even a pizza cutter.
How Long Do Egg Noodles Need to Dry?
Egg noodles don't need to dry at all! I do let them rest for a few minutes before cutting, but you don't need to hang these to dry or wait before dropping into boiling water.
That means that I can truly make these in right around half an hour give or take a few minutes. So, if I, or one of my family, has a craving for some fresh egg noodles, I can whip them up easily and have on the table in no time. What's not to love about that?! No better recipe for adding comfort food to your menu.
How Long Do I Cook Homemade Egg Noodles?
These only need 3-4 minutes in boiling water! I love how easy it is to cook fresh pasta like this. Since they are nice thicker pasta, they will be more toothsome, but that is expected.
Just drop them into salted water, and by the time you pour yourself a fresh glass of wine and turn on the music, you'll have fresh pasta ready to serve up!
How to Store Homemade Egg Noodles
If you make too much and aren't ready to cook them, you can store them in an airtight container or bag in the refrigerator for 2-3 days. For those extra-large batches, you can allow them to dry and store in a canister, but I find the results aren't as good once cooked.
If you choose to dry these, they can be safe for use for up to two years, but I prefer to use within 4 months for best flavor and quality. I will say, however, that dried egg noodles just aren't that good. In this instance, I really can't recommend drying and saving these for later versus other storage methods.
How to Freeze Homemade Egg Noodles
If you make a larger batch, instead of refrigerating, you may want to freeze them for future use. I prefer to put into labeled and dated freezer storage bags and freeze.
These are good for up to 3 months stored in the freezer. When cooking from frozen, just add an additional 1-2 minutes to the cooking time. They can go directly from the freezer to the pot of boiling water, and while not as good as fresh, this method is much better than dried pasta options.
How to Serve Homemade Pasta
As you can see, I love these with just regular butter, salt, and pepper. That is, the most classic, to me at least, way to serve egg noodles. If you want a bit of something extra, these are great in a number of recipes and dishes. Below are some variations of serving these that you might like.
- Sprinkle with freshly grated parmesan cheese and toss well.
- Add to homemade chicken noodle soup.
- Use in place of dumplings in chicken and dumplings.
- Stir in roasted minced garlic and fresh basil.
- Toss with diced tomato, green onions, and garlic.
- Toss with sesame seeds, scallions, and a drizzle of sesame oil for an Asian take on pasta.
- Add to homemade pho in place of rice noodles for a heartier meal.
- Use for homemade beef stroganoff.
- Mix in with sauteed mushrooms and onions.
- Use for beef and noodles or chicken and noodles.
- Replace other noodles with these in your favorite tuna noodle casserole.
Ingredients
- Flour
- Salt
- Eggs
- Milk
- Butter
How to Make Homemade Egg Noodles
In a large bowl, whisk together flour and salt.
Now, beat eggs together well in a small bowl.
Create a hole/well in the center of the flour mixture, and pour in the eggs.
Add in the milk and then the butter.
Stir this combination together until a ball of dough forms, adding additional flour in small increments if needed.
Dust the dough lightly with additional flour, then cover the dough ball in plastic wrap and leave it to rest for 15 minutes.
Once the dough has rested, unwrap and roll out to around ⅛" thickness.
Cut the dough into strips about 3"-4" long.
Sprinkle the strips with about ¼ cup flour, and toss to coat.
Drop into boiling water that has been salted, and cook for 3-4 minutes. Noodles will begin floating to the top when done cooking.
Drain, and add butter, salt, pepper, and any additional herbs or vegetables before serving.

Homemade Egg Noodles Recipe
Dive into a big bowl of these delicious fresh homemade egg noodles! Simple ingredients and perfect texture make this a hit!
Ingredients
- 2 cups all-purpose flour plus ¼ cup for dusting
- ¼ teaspoon salt
- ⅓ cup milk
- 2 eggs, beaten
- 1 tablespoon butter, softened
Instructions
- In a large bowl, combine the flour and salt, then create a well/hole in the center;
- Using a separate small bowl, beat the eggs until well combined;
- Pour the eggs, milk, and butter into the well of the flour;
- Mix this together until it forms a smooth dough;
- Next, wrap the dough in plastic wrap and set aside to rest;
- Once 15 minutes rest time is over, unwrap and roll the dough out to ⅛" thickness;
- Slice the dough into strips ¼" wide and 3-4" long;
- Using ¼ cup flour, dust the noodles and toss to coat;
- Drop noodles into boiling salted water and cook for 3-4 minutes or until the noodles begin floating to the top of the water;
- Drain and add butter, salt, pepper, and any additional herbs and spices as desired before serving.
Notes
Cut the noodles into shorter or longer strips as preferred and use for a variety of different recipe types.

Hi, I looked at both recipe instructions and the first says to "add in the milk and the butter". The second makes no mention of butter except to "drain and add butter, salt, pepper". Is the second instruction correct? Thank you.

I just found you! I'm excited to find someone egg noodle crazy like I am. I make homemade also. Not quite your recipe, but I'm trying yours tomorrow. Have you ever made your noodles into a sweet dumpling dish? I cook the sweet fruit syrup and noodles separate, then combine them. The fruit combinations are endless.
