Do These Need to be Refrigerated?
While you don't have to refrigerate these cookies for food safety reasons, it is a good idea to refrigerate them after filling. The frosting itself is fine at room temperature, but refrigerating or freezing these once filled gives a wonderful texture that is similar to ice cream. That makes for a better snack and one that is even better.
If you decide to keep these at room temperature, just make sure they are stored in an airtight container. They are good for 3-4 days on the counter or up to one week in the refrigerator.

The number of cookies depends upon the size of the cookie scoop you use to make your dough balls. How to Make Confetti Cookies
Preheat the oven to 375°F/190°C and line a baking sheet(s) with parchment paper.
In a large bowl, mix the dry cake mix, eggs, oil, vanilla extract, and ½ cup sprinkles together until incorporated.
This should create a thick batter. It won't be as thick as traditional dough, but won't be as thin as a cake batter.
Use a small cookie scoop to make an even number of balls on the prepared baking sheet(s) leaving at least 2" between each ball of dough.
Bake the cookies for 10-12 minutes or until the edges begin to brown.
Remove from the oven and allow to cool for 5 minutes on the baking sheets before moving to a wire rack to finish cooling.

In a large bowl, add the marshmallow fluff and butter and beat until smooth.

- 4 tablespoon unsalted butter, room temperature
- 2 cups powdered sugar (200 gm)
- 2 teaspoon vanilla extract (10 ml)
