This recipe is the perfect summer appetizer! It's easy to make and so flavorful. The best part is that it can be made ahead of time, so you can enjoy your party instead of being stuck in the kitchen.
The key to making this recipe perfect is to use the freshest tomatoes possible. I like to use a mix of different types of tomatoes for different flavors and colors. The baguette should also be fresh and crusty. If it's not, then the bruschetta won't have that great texture.

How to Make Homemade Tomato Bruschetta
Begin by preparing the toast for your bruschetta. Start by lining a baking sheet or dish with parchment paper and then preheating the oven to 400°F/200°C.
Slice your baguette into 1" thick pieces, then pay them in an even layer on the prepared baking dish.
Brush or drizzle olive oil over the tops of the bread then bake for about 10 minutes, or until they are golden brown. I used about 1 ½ to 2 tablespoons of olive oil for this.
Slice one of the garlic cloves in half, and as soon as you remove the bread from the oven, rub the cut side onto the tops of the bread. Discard this garlic once all of the bread has been rubbed with the garlic flavor.
Now, assemble the topping. In a medium bowl, add the diced tomato, 1 minced garlic clove, the fresh herbs (parsley or oregano), salt, black pepper, 2 tablespoons olive oil, and around 1 ½ tablespoons of lemon juice. Stir this together until it is mixed nicely.
Spoon the tomato mixture on top of the prepared bread slices. If desired, top with some grated parmesan or an additional pinch of salt and pepper before serving.

Traditionally you would see fresh basil in this. I like to use parsley if I don't have basil on hand, but you could also add a bit of dried Italian herb blend if fresh isn't available.
Typically this dish is not served with cheese, however, it is very common to find it served with a sprinkle of Parmesan or a bit of fresh mozzarella. While you may want to go more traditional without the cheese, it can be a great addition, especially if you make this as a lunch instead of just an appetizer.

Fresh Tomato Bruschetta on Baguette
A simple and delicious fresh tomato bruschetta is ideal when made on a fresh baguette! This is the perfect light and flavorful appetizer.
Ingredients
- 8 slices of baguette bread
- 4 tablespoons olive oil, divided
- 2 cloves garlic, divided - 1 whole & 1 minced
- 2 medium tomatoes, chopped
- 1 tablespoon fresh chopped parsley or oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 ½ tablespoons lemon juice
Instructions
- Preheat the oven to 400°F/200°C and line a baking sheet with parchment paper.
- Now, slice the baguette into 1" pieces. Place the bread on the prepared baking sheet.
- Drizzle or brush the tops of the bread with 2 tablespoons of olive oil then bake for 10 minutes until golden brown.
- Remove the baguette from the oven, then slice a garlic clove in half and rub the cut half against the tops of the bread.
- In a small bowl, combine the diced tomato, 1 minced garlic clove, the chopped fresh parsley or oregano, salt, black pepper, 2 tablespoons of olive oil, and the juice of ½ a lemon.
- Stir this mixture together, then spoon on top of the toasted bread. Sprinkle with additional herbs or grated Parmesan cheese if desired.
Notes
For extra richness, toast the olive oil and minced garlic together before adding to the tomatoes.
