For the cinnamon roll dough
- ¾ cup milk, warmed to 110°F-130°F (175ml)
- 2 ¼ teaspoons active dry yeast (7g)
- ¼ cup granulated sugar (50g)
- 1 large egg
- 1 egg yolk
- ¼ cup unsalted butter, melted (57g)
- 3 cups bread flour, plus additional for dusting (408g)
- ¾ teaspoon salt (4g)
Note: If using all-purpose flour, you will need 384g plus additional for dusting.
For the filling
- ⅔ cup packed brown sugar (125g)
- 1 ½ tablespoons ground cinnamon (12.5g)
- ¼ cup unsalted butter, softened (57g)
For the frosting
- 4 ounces cream cheese, softened (120g)
- 3 tablespoons unsalted butter, softened (43g)
- ¾ cup powdered sugar (75g)
- ½ teaspoon vanilla extract (2.5ml)

How to Make a Cinnamon Roll Christmas Tree
This recipe has three basic steps. I recommend preparing by measuring everything for the dough first, then while it rises, you can prepare the filling and the frosting to use later as needed.
Start by whisking together the milk, yeast, sugar, egg, egg yolk, and butter until it's all combined nicely.
Then, you will stir into this wet mixture, the salt, and all 3 cups of flour.

Next, you roll the dough into a tube shape. I like to start closest to myself, then roll tightly until it is all in a tube.
Using a sharp knife or kitchen twine, cut the dough into 1" thick rounds.
Then place the rounds onto the baking pan, in the shape of a tree. Let them rise again for an additional 30 to 45 minutes.
Heat the oven to 340°F/170°C and bake the rolls for 20 to 25 minutes until golden brown and have risen more. Cool for 10 minutes before spreading the top with frosting.

In a large bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until combined and smooth.
After the rolls have cooled, spread the frosting over the top.
