Frequently Asked Questions
When you are making bread each time you punch it down, you are creating a better bread, by adding air bubbles to the dough. When you press down the top of the focaccia bread and then create the dimples in the bread you are preventing it from rising too quickly. If the bread rises too quickly these air bubbles will burst.
The indents in the bread are also a great place to add some extra flavor. Whatever seasoning you decide to add to the bread can be pressed into the dimples and then the bread will rise around it and then the flavor will bake inside.
I used a basic baking dish, but you can use any pan you prefer. If you don't want a specific shape, you can bake it on a baking sheet or pizza stone. Another popular option is to use a cast-iron skillet.
The key to making focaccia bread is using some sort of baking dish that will retain heat. You are looking for something that will heat the bottom of the bread while allowing the top of the dough to cook at its own speed.
Because homemade bread doesn't have the preservatives that store-bought bread does, it doesn't have the same shelf life as store-bought bread. Homemade bread will last for about 5 days when stored at room temperature. You can freeze the focaccia bread to help it last longer. Wrap the bread well in plastic wrap and place it in the freezer. It will last for about a month in the freezer.
When you make homemade focaccia bread you want to store it at room temperature as a general rule unless it contains perishable ingredients. Things like meats and cheeses are great to add to the bread, but once added, you will want to make sure that the bread is stored, wrapped well, in the refrigerator. Otherwise, the bread will spoil quickly.
