- 3 tablespoons flour

- ½ cup white wine
- 2 teaspoons dried dill
- 2 teaspoons paprika
- 2 tablespoons soy sauce
- ¼ cup sour cream
- 2 tablespoons lemon juice
- 2 tablespoons parsley

How to Make Hungarian Mushroom Soup
Start by preparing your vegetables. Chop the onions into bite-sized pieces and slice or chop the mushrooms. I like to slice then puree later, but if you want a chunky soup, then dice the mushrooms instead of slicing.
Whisk together the flour and milk until no lumps remain. Set this aside to add later as the vegetables cook to thicken your soup.
In a stockpot or larger saucepan, melt the butter over medium heat.
Add in the onions and cook them until softened and beginning to brown. Stir regularly for around 10 minutes.
Once the onions are softened, add in the mushrooms and cook them for an additional 5 minutes until reduced in size and softened, making sure to stir them regularly.
To the soup, add paprika, dill, vegetable broth, soy sauce, and wine.
Stir together, then bring to a simmer. Lightly bubbling but not a rolling boil.
Note: If you don't drink wine, you can use additional stock or broth to replace it in this recipe.
Let this simmer until the liquid has reduced by approximately half. This should take around 10 minutes.
Then, add in the milk and flour mixture you made earlier, and continue cooking until it has thickened, for an additional 8 to 10 minutes.
Once thickened, reduce the heat to low and then stir in the sour cream and lemon juice.
Once it has heated through, you can puree it with a blender.
Serve with a garnish of fresh chopped parsley.

How to Make Mushroom Soup in the Slow Cooker
In a slow cooker, combine the onions, mushrooms, dill, paprika, soy sauce, wine, and broth. Then cook for 3 hours on high heat.
Whisk together the flour and milk then stir, the sour cream, and the lemon juice into the slow cooker. Cook for an additional 1 hour.
If you want added richness, add the butter to the mixture at the beginning of cooking.
How to Make Mushroom Soup in the Instant Pot
Turn the Instant Pot to the saute setting and add the butter and onions. Cook until softened for 4 to 6 minutes, then add in the mushrooms. Continue cooking for an additional 2 to 3 minutes.
