How to Make Loaded Taco Fries Nachos
Start by slicing your tortillas into ½" wide strips. I like to keep these around 2" to 3" long. Alternatively, you can cut them into triangles like a traditional tortilla chip if you prefer.
Then, in a deep skillet, heat the vegetable oil for frying, over medium heat. Once it is hot, you will add the tortilla strips and cook them for 3 to 4 minutes. Be careful not to crowd the pan. You may need to do these in batches. Once they are golden brown and crispy, remove them from the hot oil to drain on paper towels. Season with salt if desired.
Now, prepare your topping by adding olive oil to a large skillet and then adding in the onions to cook over medium heat for 4 to 5 minutes, or until tender and beginning to brown.
Add in the beef and pork, and cook this, stirring regularly, for 5 minutes. To the meats, add the taco seasoning and continue cooking for another 3 to 5 minutes.
Then, add the chopped tomatoes and water. Stir together and reduce heat to medium-low and simmer for another 10 minutes.
Once the tomatoes are cooked down, taste and add additional seasoning if needed. Then drain off any excess grease before preparing nachos.
Now assemble your nachos by placing a layer of the tortilla strips first, then meat, then your favorite toppings!
Frequently Asked Questions
I am using tortilla strips to make the fries in this recipe. It feels like the perfect combination for anything taco-flavored. If you prefer, you can use regular potatoes instead. I would recommend using a very thin shoestring french fry to recreate this recipe with potatoes. Tater tots would be another idea that kids would love seeing on the table.
There are so many possibilities when it comes to toppings for these loaded taco fries. The ground beef is cooked with taco seasoning for extra flavor.
Everyone likes different things on their nachos. Think of what you like on a taco and add it here. I love things like cheese, sour cream, lettuce, tomato, and guacamole.
You can use salsa, hot sauce, different veggies, olives, avocado slices, jalapenos, or even a salad dressing such as Ranch if you prefer. Just top them with your favorite taco toppings and you're good to go.
When I wrote the recipe I used traditional ground beef, usually 70/30. You can use leaner ground beef, all the way up to 95/5. You can also use ground turkey or ground chicken to make the meat. Ground chicken or turkey is lower in fat and calories. If you want the lowest fat version, use breast, but be careful because the meat tastes dry since it is missing the fat.
Also, make sure to drain the fat. This is the easiest way to make taco fries healthier.
The best way to make these loaded taco fries is to cook the tortillas right before you're ready to serve them. This ensures that they will be nice and crispy.
You can, however, prepare the toppings ahead of time. The ground beef can be cooked and kept in the fridge for up to 3 days. The cheese can also be shredded ahead of time. The diced tomatoes can be chopped ahead of time as well.
When you're ready to serve them, just cook the chips/fries and assemble everything together. These are best served hot and fresh.
