These mini chicken pot pies are the perfect comfort food meal that is portion-controlled and loaded with deliciousness. A classic pot pie in a smaller ramekin makes for a perfect and easy to serve the meal. This is ideal for anyone who wants the traditional single-serving pot pie feeling while also enjoying homemade goodness. Flaky crusts, tender chicken, rich gravy, and plenty of vegetables make this the ultimate weeknight meal.
Mini Chicken Pot Pie
Sometimes you just want a smaller portion. Other times it's all about the presentation when guests are coming for dinner. For me, it's because everything miniature just makes me happy inside. So, when making chicken pot pies in a mini version, this recipe is a favorite to grab and follow. The puff pastry crust is different than traditional but still offers that flaky layer that pairs perfectly with the rich sauce base of a pot pie.
If your family prefers a bit more traditional style of pot pie, then you might prefer this classic chicken pot pie with homemade crust, or this skillet chicken pot pie with fresh herbs and a flaky crust. Both are delicious choices that encompass your favorite flavors with slightly different twists that are sure to please.
What's the Best Crust for Pot Pies?
The best crust is what you prefer. For this mini pie version, I like using puff pastry. It's a pantry staple in my freezer at all times, so always on hand. Plus, it's so light and flaky that it doesn't feel like a heavy meal.
The other versions of chicken pot pie mentioned above both use a traditional crust, similar to a pie crust, instead. This may be a more traditional option, but it isn't necessary. Other options I have seen include using canned biscuits, homemade biscuits, pizza crust, and even canned crescent rolls as a crust.
Note: When using puff pastry, you want to add an egg wash or butter on top for added flavor. The pastry in itself is very bland, and this helps up the overall flavor profile.
Should There Be a Crust on the Top and Bottom of Chicken Pot Pie?
My husband will tell you it isn't really pot pie if it doesn't have both a top and bottom crust. I believe a pot pie can have a single crust or double crust and both are great. For this version, it's a single top crust that is fast and easy to add. You could use a single or double crust depending on your own family preferences.
What Vegetables Go Into Pot Pie?
Traditionally, chicken pot pie has carrots, onions, celery, peas, and potatoes. Some versions will include corn and mushrooms, while others have only peas and carrots. What you put into your pot pie will really depend upon your own personal favorites. Below are some popular options we have seen and enjoyed in pot pie recipes.
- Peas, carrots, onion, celery, and potatoes
- Mushrooms (button or Bella)
- Broccoli or cauliflower
- Squash or zucchini
- Okra
- Kale or spinach
- Bell pepper, jalapeno, or banana peppers
Can I Use Rotisserie Chicken in My Pot Pies?
Definitely! In fact, this pot pie recipe does just that. I am always looking for ways to save time and money in the kitchen, and a rotisserie chicken is a perfect solution for a faster pot pie. If you are short on time and want to whip up the pot pie without having to prepare the chicken, you can easily chop or shred already prepared chicken. Rotisserie chicken is a great choice and is excellent for using up leftovers. It may have its own flavor profile, so definitely check flavors before adding additional seasoning when mixing together before assembling.
Can I Freeze Chicken Pot Pies Before Baking Them?
Yes! You can easily purchase small disposable pans to put your pot pies into and wrap them to freeze and bake when desired. I prefer not to freeze my regular ramekins, but have found that you can buy disposable aluminum ramekins in bulk and they are ideal for this recipe. They come in various sizes, including as small as 4 ounces so you can make truly tiny pot pies ahead of time and freeze until ready to serve.
When freezing, I like to wrap the entire ramekin in plastic wrap, then wrap that in aluminum foil. This keeps it fresh for longer and prevents freezer burn. Label them and date and store them for up to 4 months before using them. You can thaw overnight and then cook as directed, or add to the oven frozen and add an additional 15-20 minutes to the cooking time.

How can I view the reviews? Where is the pastry puff crust recipe? This site is so off!
Katie Hale
There aren't written reviews yet, just some who rated this as a good recipe. The puff pastry is not a recipe but a simple frozen puff pastry. Phyllo dough. Good luck with the recipe!
