How to Make Homemade Nutella Doughnuts
This recipe requires a few hours to prepare, so plan ahead with the time needed for allowing the dough to rest.
Begin by making a flour paste. In a small saucepan, combine 2 ½ tablespoons of all-purpose flour and ⅖ cups of water together. Whisk for 1 to 2 minutes, until it has thickened. Then, remove the paste from the heat and refrigerate it for 30 minutes.
Once the paste has chilled, begin making the dough. In a large bowl, mix together the remaining flour, sugar, test, and salt in a large bowl. Then, mix in the flour paste you made earlier, the egg, milk, and softened butter until a sticky dough forms.
Place this dough in an oiled bowl and cover loosely, then let it set for 1 to 2 hours until it has doubled in size. If possible, place it in a warm place near the oven to help it rise faster.
Once the dough has risen, sprinkle a clean surface with flour, then roll out the dough to ¼" thickness. This is ideal for a reasonably sized donut, and they will puff up some as they cook, but you can make larger/thicker donuts by rolling out the dough a bit thicker.
Use a cookie cutter or a round glass and cut out the donuts. Roll the excess dough out again to use as much as possible.
Now, prepare a deep skillet or a deep fryer with oil for frying. Heat to 350°F, turning as needed, for 2 or 3 minutes, until the donuts are golden brown on all sides and cooked through. Do this in batches, making sure not to overcrowd the pan.
Let the donuts drain on paper towels, and then sprinkle with sugar to coat the outside of the donuts.
Now, put the Nutella spread into a piping bag. Slice a hole into the end of each donut, and use the piping bag to fill the donuts with Nutella.
These are best served hot. Store leftovers in an airtight container.
Frequently Asked Questions
Doughnuts and donuts are both fried, sweet, and tasty. But what is the difference between a doughnut and a donut?
There is no difference between doughnut and donut except for the spelling. Donut is the Americanized version of the word doughnut. However, if you are looking for the technically correct version of the word, it is doughnuts.
The simplest way to fill a donut is to use a piping bag. Cut the tip off of the piping bag and insert your filling of choice. It is easiest to have a piping tip that has a large opening.
The tip will help make sure the filling gets into the middle of the doughnut. Pipe the Nutella filling into the center of the doughnut. Depending on the size and density of the doughnut, you might need to squeeze the filling in from each size.
Another option is to cut the doughnut in half and fill it like a sandwich or spread the Nutella over the top of the fried doughnut.
Nutella donuts are best enjoyed the same day they are made. They are fresh and light and have the best texture. If you have leftovers, store them in an airtight container at room temperature for up to 2 days.
Sometimes as the doughnuts sit, they start to get stale, making them have a dense texture. Reheat in the microwave for about 15 seconds and the doughnut becomes soft again. Be careful that the filing has not gotten too warm. It can cause a burn. Once the doughnut is cool enough, enjoy.
Yes, you can freeze them! After they have cooled completely, wrap each doughnut individually in plastic wrap. Place all of the wrapped doughnuts in a freezer-safe bag and store them for up to 3 months. When you are ready to enjoy, remove from the freezer and let thaw at room temperature or place in the microwave for about 15 seconds.
I do find that freezing without the filling is the easiest option. Then you can fill them once they have thawed, and the filling will be the same temperature as the donut, rather than too cold or too hot.
