Ingredients
- 3 tablespoons unsalted butter, divided (42.5g)
- ¼ cup honey (60ml)
- 4 cloves garlic
- 2 tablespoons soy sauce (30ml)
- 1 tablespoon lemon juice (15ml)
- 1 pound medium shrimp, peeled and deveined (455g)
- ½ teaspoon salt (3g)
- ¼ teaspoon black pepper (.5g)
- 1 cup pineapple chunks (210g)
- 2 tablespoons fresh chopped parsley (8g)

How to Make Pineapple Shrimp Skewers
Before you begin cooking, you will want to take the time to soak your skewers (if using wooden) in water. I usually soak for 25 to 30 minutes. This is also a good time to peel and devein the shrimp if you did not purchase it already prepped for cooking.
Now, over medium heat, add 2 tablespoons butter, honey, garlic, and soy sauce and stir to combine. Bring the mixture to a boil, then let it simmer for 4 to 5 minutes until it has thickened.
Now, remove the sauce from the heat source and divide it into 2 equal portions. Set one aside to use after it cooks for additional flavor.
Now, assemble the skewers by placing a shrimp and then pineapple and alternating until you have 4 to 5 shrimp per skewer, depending upon size.
Season the skewers with salt and pepper then brush both sides with ½ of the sauce.
Now, in a large skillet or grill pan, heat the remaining 1 tablespoon of butter over medium heat.
Once melted, place the skewers into the pan in a single layer, and cook for 3 minutes, then turn and cook for another 2 to 3 minutes, or until the shrimp is cooked through.
Remove the shrimp from the pan once cooked through and brush with the reserved sauce that was set aside, using a clean pastry brush.
Serve hot over rice or with your favorite side dishes.

- Now, in a large skillet or grill pan, heat the remaining 1 tablespoon of butter over medium heat.
- Once melted, place the skewers into the pan in a single layer, and cook for 3 minutes, then turn and cook for another 2 to 3 minutes, or until the shrimp is cooked through.

Notes
