What Should I Serve with a Portobello Burger?
What would you normally serve alongside a sandwich or a burger? That's what you want to serve with this! I love simple garlic herb roasted smashed potatoes or a simple cottage fries recipe. My husband would want some classic Canadian poutine, but our son would prefer something like these crispy seasoned baked steak fries instead.
I love something like this roasted broccoli and cauliflower or the Parmesan garlic roasted broccoli for a lighter option. Of course, you can even make this dinner like a picnic with a side of potato salad, pasta salad, or a crunchy broccoli salad instead.

- 2 garlic cloves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 thin sliced chicken breasts
- 2-4 slices mozzarealla cheese
- 1 tomato
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon chili powder
- 2 tablespoons olive oil

How to Make a Portobello Burger
Clean the mushrooms with a damp paper towel removing the stems then cut a few slits along the top to let moisture release as they cook.
Heat a grill pan or large skillet over medium heat, then drizzle with 1 tablespoon olive oil.
Add the garlic cloves to the skillet, and once aromatic, add the mushrooms to the pan.
Sprinkle each side of the mushrooms with salt, pepper, rosemary, and thyme, then drizzle the tops with the remaining olive oil.
Cook for 2 to 3 minutes per side until they are cooked through and slightly browned.
Remove the mushrooms from the pan, and place the chicken breasts into the pan. If the garlic is getting too brown or at risk of burning, remove it from the pan at this time.
Lightly season the chicken with salt, pepper, and chili powder on both sides.
Cook the chicken for 3 to 4 minutes per side, turning to give grill marks or to brown as needed.
Remove from the pan once they have reached an internal temperature of 165°F. Cook time will vary depending upon the thickness of the chicken.
Assemble the burger with a mushroom cap, then chicken breast, then mozzarella, and tomato before the top mushroom cap.
Add additional toppings or sauces if desired before serving with your favorite sides.

When I am cooking the portobello I season it with dried herbs, salt, and pepper. But you don't have to stop there. You can season the mushroom with the same seasoning you would for any burger. You can make it taco-style with chili and cumin, or just add some onion powder and garlic powder to the spice blend. Of course, you can elevate the listed seasoning with some oregano and/or basil for a more Italian-style flavor profile.
You can season the chicken like you would season a beef burger. Salt and pepper are the typical go-to but you can then go further and add chili powder, garlic powder, and onion powder to the chicken breasts.
Or duplicate the herbs from the mushroom caps to give it a similar taste that pairs really well with the mozzarella and the tomato topping. You can even just add a generic Italian seasoning to the burger to give it a mild taste.
A bolder choice would be to season the burger mixture with a strong Mexican flavor, like tacos or chili. Use Asian seasonings to give the burger a different taste. You could even marinate the chicken breasts in something before grilling for a little bit different flavor.

What Toppings Go on a Chicken Burger?
This portobello chicken burger can be topped with all of your favorite burger toppings. Below are some things to consider adding to your chicken burger, either directly to the chicken or on the mushroom bun.
- Tomato, lettuce, red onion slices, or spinach are all classic and delicious additions.
- Cheese is always a go-to choice. You can use whatever cheese that you like but I used mozzarella because this had a bit of a Caprese vibe. Other options include American, cheddar, swiss, provolone, Colby, or even a crumble of feta or some goat cheese for a bit of extra saltiness.
- Avocado is another delicious topping. Slice the avocado thinly so that it lays flat on the burger and does not break apart your portobello mushroom.
- Bacon can be added to the burger. Choose your favorite smoked bacon or even a slice of turkey or chicken bacon if you want to stick with the lean healthier options.
- Don't forget the ketchup, mustard, mayonnaise, and relish or pickles. You can make a spicy topping using sriracha and mayonnaise. Of course, a salad dressing such as Greek, Italian, or even a bit of Ranch can also be tasty. In this case, I might even top with a drizzle of balsamic.

Portobello Mushroom Chicken Burger
A delicious portobello mushroom chicken burger is a healthy and easy meal with tons of flavor! The perfect spin on a Caprese burger for your summer garden parties!
Ingredients
- 4 portobello mushrooms
- 2 garlic cloves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 thin sliced chicken breasts
- 2-4 slices mozzarealla cheese
- 1 tomato, slicced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon chili powder
- 2 tablespoons olive oil
Instructions
- Wipe the mushrooms clean and remove the stems. Then cut slits along the top of the mushroom.
- In a grill pan or large skillet, heat 1 tablespoon olive oil and the garlic cloves over medium heat.
- Once the garlic is aromatic, add the mushrooms to the pan and sprinkle with the rosemary, thyme, and a pinch of salt and pepper.
- Cook for 2 to 3 minutes per side, drizzling additional oil over the top once turned. Cook until browned and softened but still holding shape nicely.
- Set aside the mushrooms, and place the chicken breasts into the same pan.
- Lightly season the chicken with the remaining salt, black pepper, and a bit of chili powder if desired.
- Cook the chicken for 3 to 4 minutes per side, until golden brown and an internal temperature of 165°F, has been reached. Remove from the pan.
- To assemble the burger, place a mushroom top side down, then top with a chicken breast.
- Add cheese and tomato on top of the chicken.
- Then top with the second mushroom cap as a bun.
Notes
