I've got you covered with our amazing breakfast quiche stuffed bagels. These bagels are stuffed with all your favorite breakfast ingredients - like eggs, bacon, and cheese - and they're ready in just 30 minutes.
They're perfect for busy mornings when you need to get out the door quickly. And since they're so easy to make, you can enjoy them any day of the week. Clean out the inside of the bagel, creating the perfect little indentation to create your quiche.

Ingredients
- 2 tablespoons olive oil (30ml)
- 4 plain bagels
- ⅓ cup shredded cheddar cheese (40g)
- 4 tablespoons sour cream (60ml)
- 4 strips bacon
- 2 large eggs
- ¼ pound breakfast sausage(115g)
- ¼ small shallot, minced
- Salt and pepper to taste
- 1 green onion, diced
Note: You can use breakfast sausage, kielbasa, turkey sausage, or chicken sausage - your preference.

How to Make Quiche Stuffed Bagels
Start by preparing a baking sheet by lining it with parchment paper and then preheating the oven to 370°F/190°C.
Now, heat olive oil in a skillet, and cook the bacon for 3 to 4 minutes, or until it is crisp. Remove from the skillet and drain. Once cooled, cut into small pieces or crumble.
In the same skillet, add the sausage and cook it for 4 to 5 minutes, until it is nicely browned, or if using raw sausage, until cooked through.
Now, you will prepare the quiche filling. In a large bowl, whisk the egg or eggs (depending on how much filling you want and the size of the eggs). To the eggs, add the heavy cream, cheese, bacon, sausage, shallot, and a bit of salt and pepper. Whisk this together. Note: I used about ½ teaspoon salt and ⅛ teaspoon black pepper.
Next, you will prep the bagels. Cut in half, if not already cut, and then use a spoon to scoop out the bread leaving a shell for the egg to go into. Place the bagels on the prepared baking sheet.
Pour the egg mixture into the bagels, dividing evenly between the pieces.
Now, if desired, top with additional cheese, and then bake for 15 minutes, or until the egg is cooked through.
Serve with a sprinkle of diced green onion on top and add salt and black pepper if needed.
Frequently Asked Questions
These bagels are best the day they are made but will keep in the refrigerator for up to 3 days. Make sure to store them in an airtight container or wrapped well with plastic wrap. The bagels will spoil sooner if they are not stored properly.
Reheat in the microwave for 30-60 seconds or in a 350°F oven until warmed through.
You can freeze the breakfast bagels. After the bagels have cooled completely, wrap them well with plastic wrap. I like to keep them together in a freezer bag but the plastic wrap adds another layer of protection from freezer burn.
When freezing, make sure to date and label the bag so you know how long they are good for. Bagel quiches are good in the freezer for 3 months.
There is no need to waste the bread that you remove from the inside of the bagel. You can use it to make a few different things.
Bread crumbs - Save to toast and use later for topping casseroles, macaroni and cheese, or coating meat before baking or frying.
Stuffing - Use in place of or alongside toasted bread in your favorite stuffing recipe.
Croutons - If cut out into squares, you can then toss them with olive oil and Italian seasoning to bake and make homemade croutons.
Meatloaf - Mix into meatloaf instead of bread or cracker crumbs to help soak up grease and moisture.
Or, you can simply gather the crumbs into a storage bag and freeze them until you are ready to use them. They can be a great addition to many recipes.
What Can I Add to My Quiche Mixture?
I am using bacon and sausage in my quiche stuffed bagels but you can use just about anything. Some great options below give you more variety and can make the bagels a bit heartier for serving.
- Ham
- Chorizo
- Ground beef, pork, turkey, or chicken (seasoned)
- Shredded or cubed seasoned cooked chicken
- Bell pepper
- Onions
- Spinach or kale
- Mushrooms
- Cherry tomatoes
- Zucchini
You can really add any of your favorite veggies. Just make sure they are chopped up into small pieces so they fit nicely inside the bagel. Another great thing about this recipe is that you can really get creative with the flavors. If you want a southwestern flair, add some diced green chiles and cilantro. Love Italian flavors? Add some sun-dried tomatoes and fresh basil. There is no end to the possibilities.

Breakfast Quiche Stuffed Bagels
These breakfast quiche stuffed bagels are a delicious way to serve two of your favorite items in one delicious bite!
Ingredients
- 2 tablespoons olive oil (30ml)
- 4 plain bagels
- ⅓ cup shredded cheddar cheese (40g)
- 4 tablespoons sour cream (60ml)
- 4 strips bacon, cooked
- 2 large eggs
- ¼ pound breakfast sausage, cooked (115g)

Instructions
- Preheat the oven to 370°F/190°C and line a baking sheet with parchment paper.
- In a small skillet, heat the olive oil over medium heat, then cook the bacon for 3 to 4 minutes, turning as needed, until crisp. Remove from the pan, drain on paper towels, and cut into small pieces then set aside.
- Into the same pan, add the breakfast sausage and cook for 4 to 5 minutes, until it is cooked through and browned.
- In a large bowl, whisk the egg(s) and then stir in the heavy cream, shredded cheese, bacon, sausage, diced shallot, salt, and black pepper together.
- Now, slice the bagels in half and carefully scoop out part of the center bread to make room for the eggs.
- Now, fill the bagels with the egg mixture. When doing this, I recommend doing so after putting the bagels onto the baking sheet you will be cooking them on.
- Bake for 15 minutes or until the egg is cooked through. Serve with a sprinkle of diced green onions and add salt and black pepper if desired.
Notes
Try different flavors of bagels for more pops of flavor. Everything bagels, onion bagels, and cheese bagels are excellent with this.
