Breakfast Biscuit Poppers are the perfect way to start your day! They’re easy to make and delicious. You can even freeze them for later, so you always have a quick meal on hand.
These poppers are the best thing since sliced bread (pun intended). Just pop one of these tasty treats into the microwave or oven and enjoy an amazing breakfast that is sure to please everyone at home. You won’t believe how good these taste until you try them yourself!

- 8 count canned biscuits (Pilsbury Grands used)
- ½ pound breakfast sausage
- 4 eggs
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup shredded cheddar cheese
- 1 tablespoon parsley

How to Make Breakfast Biscuit Poppers
Preheat the oven to 325°F and line a baking sheet with parchment paper then set it aside.
In a small skillet, over medium heat, cook the breakfast sausage for 5 to 6 minutes or until no longer pink, stirring and breaking up the sausage as it cooks.
Remove the sausage from the skillet and drain off any excess grease then set the sausage aside.
In a small bowl, whisk together the eggs, salt, and black pepper until combined.
Place the skillet back over medium heat, and pour the beaten eggs into the pan.
Cook for 3 to 4 minutes, stirring regularly, until scrambled and cooked through.
Using a rolling pin, roll out the biscuits on the baking sheet until they are flattened.
Into the center of each biscuit, leaving room all around, add a spoon of cooked sausage, cooked eggs, and a sprinkle of cheese. Reserve some cheese for topping the biscuits.
Fold the sides of the biscuits over the filling, pressing the edges together to form a ball.
Place the ball seam side down onto the baking sheet.
Sprinkle the tops of each ball with a bit of cheese and parsley.
Bake for 20 to 30 minutes, until golden brown and the biscuit, is cooked through.
Remove from the oven and let it cool for 5 minutes before serving.

For this recipe, I used Pilsbury Grands biscuits. You can use any brand or type of canned biscuit, but I do recommend using a larger option to fit all of the ingredients inside easily.
If you want to take a few extra steps, you can also make homemade biscuits. If you go this route, use a large biscuit cutter to cut the dough into shape.
These are good for 2-3 days in the refrigerator. Of course, they always taste the best fresh but can certainly be reheated over a few days. To help the poppers stay as fresh as possible for as long as possible, you will want to keep them stored in an airtight container in the refrigerator. I like to keep a paper towel underneath them and on top to help absorb any moisture so they aren't soggy when you reheat them.

You can also assemble up to baking, then flash freeze them on a baking sheet before popping them into a freezer storage bag or container. Just drop them onto a baking sheet and bake when ready to serve, or thaw overnight in the refrigerator before baking. They are good in the freezer for up to 3 months.

- Swap cheeses for mozzarella, gouda, fontina, Colby Jack, or a blend of cheese you prefer.
- Add in sauteed vegetables such as onions, bell peppers, mushrooms, zucchini, squash, broccoli, cauliflower, or jalapenos.
- Replace the eggs with seasoned crumbled tofu or a vegetarian meat sausage or bacon option.

- Follow steps 2 to 11 as listed above.
- Preheat the air fryer to 300°F and then place the poppers onto the air fryer basket or tray.
- Cook for 5 minutes, then turn if needed, and continue cooking for an additional 5 minutes. Depending upon the air fryer, you may need to continue baking for 2 to 3 additional minutes to make sure the biscuit is cooked through.
