Meat and Egg Stuffed Pancakes
Pancakes are an inexpensive and delicious food. They are made in no time, cost almost nothing to make and the flavors can go with anything. This version of a "pancake" is not what you may be thinking. Rather than a batter, this recipe is made with a dough that is stuffed with savory ingredients.
A simple homemade dough is rolled out, filled with cooked and seasoned beef, and egg yolk, then pan-fried. It creates a delicious meal that is perfect for breakfast, lunch, or dinner.
This "pancake" is similar to a pasty or empanada but pan-fried instead of deep-fried. Sometimes called a hand pie, this is a great savory choice using flaky dough and your favorite fillings.
What Goes with Meat Pancakes?
These hand pies are often served by themselves as an all-in-one bite for breakfast or lunch. However, they can be a part of a larger meal and when that is the case, there are many things that go well alongside them to create a bigger meal.
Some of my favorites would be to start with a bowl of soup like this pasta e Fagioli soup or even a Dutch oven cabbage vegetable soup recipe. Other options, of course, include something lighter like this cucumber pomegranate salad or a simple Panzanella salad.
A side of garlic mashed potatoes or simple roasted broccoli and cauliflower can also round out the meal a bit. I like a balance of light alongside the heavier stuffed pancake.

How to Make Savory Stuffed Pancakes
Begin by preparing the pancake dough. Mix 2 cups of flour and the salt together in a large bowl.
Then, add in the water and egg.
Use a clean hand or wooden spoon to mix these together until the dough forms.
On a clean counter, add a sprinkle of the reserved flour, and turn the dough out. Begin kneading the dough for 4 to 6 minutes.
Then, cover the dough and set it aside to rest for 30-minutes while you prepare the filling.
Over medium heat, cook the ground beef with salt, pepper, garlic, and onion powders for 8 to 10 minutes, or until it is cooked through and no pink remains. Use a spatula to break up the bits of ground beef as it cooks.
Set the cooked meat aside to cool.
Uncover the dough and knead for an additional 2 minutes then roll it out into a rectangle.
Use a cookie cutter or small bowl to cut out 6 rounds of the dough.
On the center of each round, add a spoon of ground beef.
Add an egg yolk on top of the beef.
Lightly brush the edges of the dough with water, then top with the second dough round.
Use a fork to crimp the dough around the edges to seal.
Heat the vegetable oil in a skillet over medium heat, and cook the pancakes for 1 to 2 minutes per side until golden and cooked through.
How do I Knead Dough?
To properly knead the dough, you will place the ball of dough onto a floured surface, and using the palm of your hands, push away from your body. Rotate the dough 90° then repeat by pushing the dough away with your palms. Every fourth turn, fold the dough over itself and continue.

You can find ground breakfast sausage or use the same kind that is often used in burgers, or Italian sausage is a tasty choice. Another option that changes things up and use spicy ground sausage or chorizo. If you don't want to use ground meat, you can replace it with shredded pork, chicken, or even diced ham or steak.

These can be breakfast pancakes or dinner pancakes. Most people think of these as dinner pancakes because of the ground beef but you can use breakfast sausage to bring in a breakfast flare to these stuffed pancakes.
