Pulled Chicken Sandwiches
Pulled chicken is one of my favorite slow cooker meals. It is so easy to throw into the Crock Pot in the morning and let cook all day while I work. This recipe has a simple but flavorful homemade sauce. Unlike most barbecue sauces, this one is sweet and tangy instead of spicy. I love topping it with a simple creamy coleslaw and toasted bun.

Can This be a Freezer Meal?
Yes! I love that I can mix up the sauce and pour it into a freezer bag with the chicken breasts to freeze and cook down the road. You can also cook it completely, allow it to cool, and portion it for freezing as a fast meal later.
Just remember that if you are freezing any meal like this one, you need to make sure that you date and label the bag so you know what is in it for later. I also like to add on my cooking instructions when labeling a freezer meal.

Can I Make This Chicken in the Instant Pot?
You can easily make this pulled chicken recipe in the Instant Pot. All you have to do is add the chicken breasts and all ingredients, except for the flour, for the pulled chicken into the pot. Set to high and cook for 13 minutes. Allow it to naturally release for 7 minutes. Release remaining pressure and remove the chicken from the pot. Mix the flour into the sauce and whisk well, then shred the chicken and add back into the pot to mix with the barbecue sauce.
If you have any leftover pulled chicken recipe, you can add it into this chicken quesadilla recipe in place of the spicy chicken. Skip the sriracha sauce and use the barbecue sauce instead.

- Chicken breast
- Applesauce
- Worcestershire sauce
- Honey
- Sweet mustard
- Hot sauce

- Onion powder

Ingredients for Creamy Coleslaw
- Shredded cabbage
- Pickled jalapeno
- Lemon juice
- Sour cream
- Mayonnaise
- Salt
- Black pepper
How to Make Pulled Chicken Sandwiches
For the pulled chicken, you will place your chicken into the bottom of your slow cooker and then cover with all of the chicken ingredients except for the flour.
Note: I like to mix the sauce ingredients together first before pouring over the chicken, but you do not have to do that.
Cook on low for 5-6 hours.
Once done cooking, remove the chicken from the slow cooker and shred, then set aside.
Mix the flour into the sauce in the slow cooker, and whisk until no lumps remain.
Add the chicken back into the sauce and allow it to cook for another 15 minutes to thicken.
Serve on toasted buns with the cabbage recipe below.
How to Make Creamy Coleslaw Recipe
In a large bowl, combine the ingredients for the coleslaw together and mix until well combined.
Top the pulled chicken with a spoon of slaw before serving.

Instructions
For Pulled Chicken:
- In a bowl, combine the applesauce, hot sauce, Worcestershire sauce, honey, hot sauce, garlic powder, onion powder, salt, and pepper until combined.
- Place the chicken breasts in a single layer on the bottom of your slow cooker, then pour the sauce over the top.
- Cook for 4 hours on low heat.
- Remove the chicken from the slow cooker and shred.
- Whisk the flour into the sauce until no lumps remain, then add the chicken back into the sauce.
- Allow the sauce to soak into the shredded chicken before serving.
For Creamy Coleslaw
- Mix together the cabbage and coleslaw ingredients in a large bowl until well combined.
- Refrigerate until time to serve.
How to Make a BBQ Pulled Chicken Sandwich
- Toast buns, top with 2-3 tablespoons pulled chicken, and 1-2 tablespoons coleslaw, then serve.
Notes
Add this mixture of shredded pulled chicken and coleslaw to a tortilla. Wrap and slice on a bias before serving.
