We're always in search of innovative and fresh combinations for salads - especially these days with the #30DaysofSalads series. Have you been following along? This salad is the definition of a summer salad - clean fresh flavors and absolutely healthy! Who needs store bought salads when making salads can be so easy?
Till now, officially we love styling and photographing salads the most - they're so full of colors and vibrant! It helps that we're making one every day for 30 days, but you get the picture right? While making salads, the focus should always be on fresh ingredients! Never compromise on the ingredients and just forget about buying dressings from the stores - it has to be one of the quickest and easiest things to make!
We'll soon be making a section on our blog catering to cooking/baking tips as well as other nutritional information. We'll also try and focus on people with diabetes because it has become so common and so many people think they can't have anything even slightly sweet anymore! No, it's more about a slight change in lifestyle (and seriously, for the better!). We're so grateful to be studying to become holistic nutritionist - it's really making our mind open up to healthier life choices. We can't wait to share these with you!
Okay, so seriously, this salad cannot possibly take you more than 5 minutes to make. Make that 10 if you like to cook while listening to music and occasionally breaking down in a dance (who else has the habit of doing that?!). But honestly, with this recipe you have no excuse to not eat a salad! And this is honestly almost a cheat salad - it's more fruit than veggies - but hey, we're definitely not complaining. Strawberries and especially blueberries are packed with antioxidants - perfect for the summer! So let's get down to the recipe!

Strawberry Feta Salad
With this recipe you have no excuse to not eat a salad!
Ingredients
- ½ cup strawberries - quartered
- ½ cup blueberries
- 50 grams feta cheese - diced
- ⅔ cup mint leaves - rinsed and dried
- 3 cups romain lettuce - rinsed, dried, and torn into bite size pieces
- 4 tablespoons raspberry vinegar
Instructions
- Toss strawberries, blueberries, mint leaves and the lettuce along with the raspberry vinegar.
- Serve with feta cheese on top.
