This recipe is a meal all by itself, but if you want to add something on the side, then feel free to do so. Toasted bread is nice, but I recommend serving it with some nice fresh fruit. Homemade yogurt adds some lightness and balance and works well alongside this for a brunch meal.

- 1 yellow onion
- 1 red bell pepper
- 1 green bell pepper
- 5 green onions
- 2 ½ cups shredded cheddar cheese
- ½ pound breakfast sausage links
- 1 pound tater tots (500 g)
- 6 large eggs
- 1 ½ cup milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder

How to Make Tater Tot Breakfast Casserole
Prepare the vegetables and chop the bacon and sausage so you are ready to assemble the casserole. Then, preheat the oven to 350°F/175°C and prepare a casserole dish with some butter or non-stick spray so the casserole won't stick.
In a skillet, you will cook the chopped bacon for 2 to 3 minutes over medium heat until it is mostly cooked and the fat has been rendered.
Then, add in the diced onion, and continue cooking, stirring it regularly, for another 3 to 4 minutes until the onions have turned translucent.
Remove the bacon and onions from the skillet and pour them into a large mixing bowl along with the chopped bell peppers and scallions. Stir in 2 cups of the shredded cheese, save the rest for later, and add in the chopped sausages.
In the prepared baking dish, divide ½ of this mixture and spread it over the bottom.
Then top it with a layer of tater tots.
Now, add the second half of the meat and vegetable mixture and spread evenly over the tater tots.
In a medium bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until nicely combined and frothy.
Pour the eggs over the tater tots and vegetables in the casserole dish.
Place on the middle rack of the oven and bake for 40 to 45 minutes until the eggs are set.
Remove from the oven and sprinkle the top with the remaining ½ cup of cheese and pop back in to cook for an additional 5 to 7 minutes until melted and beginning to brown.
Let stand for 10 minutes before slicing to serve. Top with additional cheese, salsa, or fresh cilantro when serving.

This delicious loaded tater tot breakfast casserole is filled with sausage, bacon, eggs, cheese, and vegetables in every bite!
Ingredients
