Banana Bread Blondies
A banana bread blondie is a wonderful combination of two delicious and unique desserts. With the thicker and denser filling of a blondie and the flavor of your favorite banana bread, this is a dessert that has everyone asking for more. The best part of this recipe is you don't have to worry about it being too dry like some sweet bread recipes often are. This denser texture is moist, soft, and satisfying.
If you prefer a true brownie, then you will love this recipe for triple chocolate fudgy brownies. For those that want something lower in carbs, you can whip up a batch of these fudgy keto brownies instead. Sugar-free and low carb friendly, they are a delight!
What is the Difference Between Brownies and Blondies?
The difference between these two desserts is just the chocolate. Brownies are loaded with chocolate and blondies typically do not include chocolate, or only a small amount but not fully chocolate flavored. While this recipe does have chocolate on top as a finishing touch, they can still be called blondies as the base of the recipe is without chocolate. You can, of course, just call them banana cake bars if you prefer.
Can I Add Nuts Into the Batter?
If you like the traditional banana nut flavor often found in banana bread, you can add chopped walnuts or pecans into the batter just before baking. I grew up with pecans in my banana bread but others prefer walnuts or even black walnuts. Either one will work well in this recipe, and you could even add chopped peanuts if you wanted something extra special. Peanuts and peanut butter are an excellent addition to this dessert recipe.
What Other Mixins Go in Banana Bread Blondies?
While this recipe is perfect just as it is, there is something to be said about adding a little extra texture to the batter. Mixing in something else for crunch or flavor is not uncommon, and below are some of the ideas that I find work best with this particular bread recipe.
- Milk chocolate chips, white chocolate chips, dark chocolate chips, peanut butter chips, cinnamon chips, or butterscotch chips.
- Chopped pecans, walnuts, macadamia nuts, pistachios, or peanuts.
- Golden raisins or dried cranberries.
- Sliced banana pieces on top before baking.
- Unsweetened coconut shreds mixed into the batter.
How Can I Ripen Bananas Faster?
There are a few options for ripening bananas fast. The best method is to place the banana with an apple into a paper bag and let sit overnight. This will typically ripen it nicely and create a rich ripe banana flavor you prefer.
Of course, you don't always have overnight, so there are other common methods to use for ripening a banana for banana bread. One option is to peel the bananas, place them into a microwave-safe bowl, and heat in 30-second increments until soft and able to mash. The other option is to place them, still in the peel, on a baking sheet and bake at 300°F for 15-20 minutes until the peel is dark brown or black and they are soft on the inside.
Do I Have to Add Chocolate on Top?
If you prefer no chocolate, then simply skip that last step before baking. The dark chocolate is a great contrast to what might otherwise be overly sweet, so a perfect compliment in this recipe. You can also use white chocolate, milk chocolate, or semi-sweet chocolate if you prefer Of course, if you do not add chocolate, you can still top with chopped nuts if desired.

This is a moist fudgy blondie. If it seems like the batter was wetter, it could be from the size or ripeness of the banans used as well as the size of the eggs. I am sorry it didn't turn out as you expected. Perhaps try again in a larger dish for a thinner slice that will cook through faster?
Autumn
I found the blondies very light and cakey. My suggestion would be to omit the sour cream and add more dry flour, sugar, baking powder, and salt in appropriate proportions until it's the same consistency of blondie batter.
