If that is the case, whether you don't have all the ingredients on hand or simply need to save a few minutes, you can use a brownie mix. You will just substitute the brownie ingredients with the mix and include whatever your mix calls for. Then once the batter is made, you will go on with the recipe as called for.
Can I Add Other Mix-In’s?
There are so many things that you can add to this recipe. Things like nuts and marshmallows are perfect. You can also add in other things like different types of chips. Instead of using chocolate chips, you can use peanut butter chips or even toffee chips.

How do I Know When Brookies are Done Cooking?
You will know when the brookie is ready because you will have baked it the time or close to the time and then you can check it in the center. When you press a toothpick, or a butter knife in a pinch, into the center of the brookie, it will come out clean. It may still be moist, but won't be liquid or uncooked.
Can Brookies Be Frozen?
I always want to have Brookies on hand. I mean always. I like to make a large batch, or a double batch and take the ones that won't get eaten right away and freeze them. This lets me have them on hand and all I need to do is take them out of the freezer. You want to make sure that they are covered well, stored in an airtight container or a freezer bag. I like to place a layer of plastic wrap or wax paper between the layers. This keeps the brookies from sticking together and it makes it much easier to remove once I have thawed them.

How to Make Oreo Cookie Brookies
Preheat the oven to 350°F. Grease the 9x13-inch baking dish or spray well with non-stick cooking spray.
In a large bowl, sift the cocoa powder, flour, and salt then set aside.
Using a hand mixer or stand mixer, in a large bowl, add the melted butter, sugar, eggs, and vanilla extract and whisk together until completely combined.
Add the sifted cocoa powder mixture into the egg mixture and mix until combined.
Next, pour in the chocolate chips and stir until just combined.
Spread the brownie batter into the bottom of the prepared pan into an even layer.
Bake for 20 minutes.
While the brownies are baking, make the second layer.
In a medium microwave-safe bowl, melt the white chocolate chips in 30-second increments, stirring between each, until the chips are mostly melted.
Whisk the melted chips until they are completely melted, then set aside.
In a large bowl, use a mixer to beat the eggs until they are foamy.
Add in the sugar and vanilla extract, and then mix until completely combined.
Pour in the melted but cooled white chocolate chips.
Then add the flour and salt and mix until combined.
Fold in the chopped Oreo pieces.
Using a large spoon, drop chunks of the cookie dough over the brownie layer until it is mostly covered.
Bake for an additional 35 to 30 minutes until the dough is just set and golden.
Allow the brookies to cool completely before slicing to serve.
Note: To easily remove from the pan, line the baking sheet with parchment paper rather than spraying with non-stick spray. With the paper overlapping the edges, you can easily lift the entire pan out to slice.

Brownie Layer
- ¾ cup unsalted butter, melted (185 g)
- 2 ¼ cups granulated sugar (450 g)
- 2 teaspoon vanilla extract
- 3 large eggs
- ¾ cup unsweetened black cocoa powder (96 g)
- ½ teaspoon salt
- 1 ¼ cups all-purpose flour, scooped and leveled (150 g)
- ¾ cup milk chocolate chips (120 g)
Cookie Layer
- 12 oz white chocolate chips (240 g)
- ½ cup unsalted butter (125 g)
- 24 Oreo cookies, chopped
- 2 large eggs
- ⅓ cup granulated sugar (67 g)
- 2 teaspoon vanilla extract
- 1 ¼ cups all-purpose flour (150 g)
- ½ teaspoon salt
Instructions

When do you add the 1/2 cup of butter for the cookie layer? It's never mentioned. I also don't know if it needs to be melted. I'm in the middle of making this with my daughter and did not notice the omission. I will have to guess. Please let us know what to do for next time.
