A traditional meatloaf blend is paired with parmesan cheese, ground chicken, and a special blend of spices to create a hearty meat entree that is ideal for weeknight meals, or that occasional leftover sandwich the next day.
Chicken Meatloaf Recipe
I grew up eating ground beef meatloaf while many I know grew up eating a combination of pork and beef, but it wasn't until I was an adult that I tried this variation using chicken. Ground chicken is a great healthier option if you need to avoid red meat, and is a mild flavor that really picks up on the seasonings and herbs included in the mixture. With a simple mixture going right into the oven to leave while it cooks, this is one of the ultimate easy weeknight meals.
Can I Make This With Other Ground Meats?
While you can make this with ground pork, ground turkey, ground beef, or a mixture of all, this is best made with chicken. The chicken makes this taste almost like chicken parmesan rather than the classic meatloaf flavor you have been expecting. You can, of course, use whatever ground meat you prefer and still have great results. Remember that when working with fattier meats, you will have more drippings in the pan, so be careful when removing them from the oven.
Can I Top This With BBQ Sauce Instead of Ketchup?
This recipe does best with a tomato-based sauce, but can be made with a barbecue if you prefer I have used a basic pasta sauce, marinara, tomato sauce, or this ketchup combination, all with great results. While I have not personally made this using barbecue sauce, I am sure the result would be flavorful and worth trying. The joy of this recipe is that you can adjust it to suit your tastes with minor changes that won't affect the overall end result.
What Goes With Chicken Meatloaf?

What Temperature Should Chicken Meatloaf Be?
Chicken meatloaf should be cooked to 165°F internally. This is the temperature where it is safe to consume. I prefer checking with a digital meat thermometer to make sure it is cooked through but not overcooked. As this will be resting for 15-20 minutes after taking from the oven, it is safe to remove at 160°F and let rest to finish coming to temperature before serving.
Should I Cover Meatloaf While It Is Baking?
For this recipe, I do not cover it while baking. Since it is just a thin layer of sauce on top and it is cooked at a lower temperature for longer, it is less likely to burn or dry out too fast. If you prefer to cover this or if your oven tends to cook hot, then feel free to do so. A tented piece of foil over the top works wonderfully. This could, also, be baked in a Dutch oven with the lid in place if preferred. Simply form into a loaf shape and place into the pan and cook as directed.

How Do I Make Homemade Chicken Meatloaf?
Preheat the oven to 350°F.
In a large mixing bowl, combine the ground chicken, onion, parsley, garlic powder, salt, black pepper, soy sauce, tomato paste, eggs, and heavy cream until mostly combined.
Mix in the breadcrumbs and Parmesan and stir to combine completely.
In a small bowl, whisk together the ketchup, brown sugar, and soy sauce.
Brush the inside of the loaf pan with a thin layer of the sauce mixture, making sure some is left to go on top.
Pour the chicken mixture into the loaf pan and spread into an even layer.
Top with the remaining sauce brushing into an even layer over the top.
Bake the meatloaf, uncovered, for 1 hour.
Remove from the oven and allow to cool in the pan for 15-20 minutes before removing to slice and serve.

I started a low carb diet a few months ago and was tired of having to eat so much red meat. I ran across this recipe and thought, "Ugh, it's probably going to be dry." I tried it, and I have to admit it is the MOST FLAVORABLE meatloaf recipe I've ever made! I've made a lot of meatloafs in my day! I had to change it a bit because I'm not doing breadcrumbs, but if I was I'm sure I wouldn't change a thing. I've never thought to use soy sauce or parmesan cheese. I SERIOUSLY LOVE this meatloaf. I've never made a meatloaf that looked that mushy before - I think that is why this one comes out so moist. Great job!
