What Do I Serve with Vegan Meatloaf?
When you are thinking about what to serve with vegan meatloaf, it is simple. This is a versatile meal, much like making a traditional meatloaf. The only thing to remember is that if you are preparing for those who require a plant-based/vegan diet, then it's necessary to make adjustments to your side dish recipes as well.
Common side dishes that go with meatloaf include mashed potatoes, roasted potatoes, quinoa, rice, and of course vegetables of all kinds.
If you don't need to serve with a vegan side, you might like these garlic butter mashed potatoes, a simple crispy Parmesan roasted baby potato or even the parmesan garlic roasted broccoli. Salads of all kinds and any simple sauteed or steamed vegetable pair wonderfully with this also.
Ingredients
- 10 oz Impossible burger (280 g)
- ¼ cup plain breadcrumbs
- 2 tablespoons tomato sauce
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce (vegan)
- 1 teaspoon onion powder
- ½ teaspoon dried parsley
- ¼ teaspoon salt
- ¼ teaspoon black pepper
TIP: If you can't find a vegan Worcestershire sauce prepared already in your grocer, you can make your own homemade, or use equal amounts of coconut aminos.
Handy Kitchen Tools
How to Make an Impossible Burger Vegan Meatloaf
Start by preheating the oven to 400°F/200°C. Then, line your baking sheet with parchment paper and set it aside. You can also use a loaf pan, just spray or line it.
In a large bowl, mix together the vegan burger meat, breadcrumbs, ketchup, garlic powder, onion powder, dried parsley, salt, pepper, and vegan Worcestershire sauce.
Mix this together until well incorporated then form into a loaf shape and place onto the baking sheet.
Bake on the center rack of the oven for 25 to 30 minutes until browned and the meatloaf has an internal temperature of 160°F at the thickest part. Even though this is plant-based meat, it still needs to reach a safe temperature before consumption.
Once baked, remove this from the oven and let it stand for 10 minutes before slicing to serve. It is best served with additional ketchup or tomato sauce over the top. You can also serve with gravy if you prefer or just ketchup on the side for dipping.
Frequently Asked Questions
While you can use whatever vegan meat substitute you prefer, this recipe was written especially using Impossible Burger. Another option that is good for this is to use the Beyond Burger brand of "raw meat".
Many companies offer meat crumbles, but this recipe is designed for the raw vegan meat option you would cook from a raw state. So, look for that in the market versus the frozen food crumbles or TVP options that are readily available.
If you are using a different brand, while it will work, you might not have the same results. Be sure to do a trial on the recipe before making it for a special occasion.
Breadcrumbs are the most common binder when it comes to making meatloaf. If you want to use something other than breadcrumbs, you can try using oatmeal, quinoa flakes, or even ground flaxseed meal. A classic in traditional meatloaf is crushed saltine crackers, and that too can work in this recipe.
No matter what binder you use, just make sure it is truly a vegan option if you are serving this to those who require a plant-based diet plan.
The best way to know if your Impossible Burger Meatloaf is done cooking is to use a meat thermometer. Even though you do not have to worry about raw meat, you want to make sure it is cooked all the way through. Make sure the internal temperature of the meatloaf is 160°F.
Once it reaches this temperature, you can remove it from the oven and let it rest for a few minutes before slicing and serving. This helps the liquids to reabsorb into the meatloaf and it will be firm when you try to move it to the plate.
If you do not have a meat thermometer, you can also tell that the meatloaf is done cooking when it is firm to the touch and browned nicely. While traditional animal meat will often no longer be pink once cooked through, vegan options may still show a pink color when done cooking.
