Canadian bacon, ham, turkey bacon, Italian sausage, breakfast sausage, turkey sausage, or even chicken sausage are all excellent choices. Just make sure the sausages are cooked fully and excess grease has been drained first.
If you live in an area that has things like pork roll or scrapple, these breakfast meats can also be added. Another delicious option is to add veggie meats to this dish.

How to Make a Vegetable Bacon Frittata
Preheat the oven to 350°F.
In an oven-safe skillet, heat olive oil over medium heat.
Add the onion, bell peppers, and mushrooms, then saute for 3 to 4 minutes until softened. Remove from heat and set aside.
In a large bowl, whisk together the eggs, cream, salt, black pepper, and oregano until combined.
Into the egg mixture, stir the bacon, cooked vegetables, and cheese until incorporated. If desired, reserve some of the cheese to add to the top for the last 5 minutes of the cooking time.
Pour back into the skillet used for the vegetables or into a prepared baking dish that has been sprayed with non-stick spray.
Bake, uncovered for 30 minutes until the top is golden and the eggs are set in the center.
Let stand for 5 to 10 minutes before serving.
Frittatas are prepared in a cast iron pan or oven-safe skillet because they begin on the stovetop and finish in the oven or are just baked. Frittatas, unlike omelets, can be made to feed one or many people, and they may also be eaten hot or at room temperature. Large frittatas are divided into pieces like a cake, whereas omelets are folded or rolled to eat like a burrito.
You can use milk instead of cream in this frittata. It does take away from the richness and creaminess of the frittata. Some people prefer to use milk instead of cream because it is lower in calories. Regardless of which you choose, it is going to taste delicious.
The best rule of thumb when making a frittata is to use ¼ cup of dairy for every 6 eggs. Any more liquid added will cause it to not set well. This is also why it is important to use fresh vegetables and cook them before adding to the egg mixture so all of the excess liquid has been removed.
If you are going to start this on the stove top and bake it to finish, an oven-safe skillet is a must. I recommend using either a cast-iron skillet or a Dutch oven. Both are excellent choices that can go from stovetop to oven easily.
